salmonella is not found in beef, e coli is. However, chances are well handled premium cuts from a reputable source are ok, i am assuming this is what your friend chooses to ingest. Carpaccio is a dish from italy which is raw beef in thin slices, japanese eat raw beef (even raw fish has its limited dangers if consumed from questionable sources), and even steak in steakhouses consumed ¨rare¨ have a slim chance of beig contaminated... again the risk is only minimal if consumed or purchased at a reputable establishment

e-coli is definitely a concern when eating raw beef. This bacteria lives in the animals bowel and the only way for it to get on the meat is if the butcher is not clean.

Even if meat is exposed to e-coli, it is only the surface of the meat that is exposed as the bacteria does not penetrate the surface. This is why you hear so much about e-coli and burger joints. All the hamburger might have been exposed to the air and therefore if there are the bacteria present they will be throughout the whole burger. This is why it is important to cook a hamburger at least to medium. The bacteria are killed by cooking.

Steaks and roasts only have their outside surfaces exposed to the air. these surfaces get much hotter than the required temperature for e-coli bacteria to die. This is why you can eat a steak rare and it is ok.

Steak Tartar is usually made with either sirloin or even better tenderloin. The outside is removed so there is no chance of contaminants getting in.

Meat is much better when all the juices are not cooked out of them. Try it.

I have eaten raw chopped meat since I was a kid. In some restaurants, chopped sirloin is served raw and is called Steak Tartar. It is a large lump of raw chopped sirloin with a raw egg cradled in the top of the mound along with lettuce and chopped onion on the side and the dish is sprinkled with capers. I never ever got sick from it but you do have to make sure the chopped beef is fresh and lean. It is an acquired taste for a lot of folks. I love it!! Ain't dead yet!

Sorprisingly, this is a double-edged sword. If the meat is fresh, handled prpoperly and under 41 degrees, there is little harm if the meat is wholesome. If the meat has an excellerated level of bacteria to begin with, this may cause an "intoxicated mediated infection". Freind should proceed with caution, but not fear for one's life.

It's because it is completely unnatural for us to eat raw animal flesh. It's dead and contains microbes that other types of dead flesh contain, the ones that will eventually cause it to turn even more repulsing.

I am a firm believer of the advice shown on the following page:
