Equate Spoonful is not as great a quality as Splenda, but it measures out like sugar does if you canmanage to find that.

SUGAR FREE ICE CREAM
3 lg. pkgs. sugar free pudding (kind to cook)
3 lg. cans skim evaporated milk
2 boxes (8 eggs) Egg Beaters
4 tbsp. liquid sweetener
Mix well and cook until it begins to thicken, stirring constantly. Remove from heat and cool. Use hand mixer to beat out any lumps. Refrigerate overnight. Add 2 tablespoons vanilla. Put into 1 gallon freezer bucket and finish filling with 2% milk. Mix well and freeze as usual. (Don't tell anyone this is sugar free and they won't guess!).

At the Reading Station in Philadelphia they do not use any sugar in their ice cream. I watched a show where the owner of their supplier stated that they let the sweetness of the cream itself do the talking. Try making ice cream with no sugar and use flavorings if you are able.

Sugar Free Chocolate Ice Cream
1 teaspoon plain gelatin
2 1/2 cups low-fat milk
1/2 cup sugar free instant chocolate drink mix
1 cup drained yogurt (the solid half of 2 cups yogurt strained overnight)
1 teaspoon vanilla extract
1 dash salt
Soften gelatin in 1/2 cup of the milk.
Heat mixture over medium heat in a saucepan until gelatin dissolves.
Remove pan from heat.
Place saucepan in another bowl of cold or ice water to cool to room temperature.
Pour the mixture into a blender or food processor.
Add remaining milk, drink mix, yogurt, vanilla and salt.
Blend until smooth, and cover
Chill ready to freeze.
Blend or stir before pouring into the ice cream maker.
Freeze according to your ice cream maker's instructions.

If you're doing this to try to lose weight then why do you insist on getting used to eating foods that are sweet or are supposed to be sweet? Lay off the diet cokes and low-fat brownies and try some salad.
Not to assume you're trying to lose weight but come on...why else would you want sugar-free ice cream?

What about using lots of fresh fruit instead? If you are diabetic, that wouldn't work, but if you are trying to watch your weight, it would be SO GOOD! yum! Lots of strawberries!
