If you have flour tortillas & cheese, you cand add almost anything in between and then grill in a skillet for quesidillas. Some possibilities....red pepper strips, fresh spinach & chicken, onion, bell pepper, italian sausage, salmon, fresh dill, and chopped tomato, you get the idea. After grilling, slice into quarters and serve with salsa, chopped avacado, or whatever you have on hand. Some of my favorite home-made creations have been made with 'whatever's in the cupboard & fridge' ingredients.

The other night I didn't feel like having a heavy dinner because it has been so hot lately. So I made some angel hair pasta, tossed it with olive oil and pepper. Don't salt the pasta yet because the prosciutto is salty and will add the salt to the pasta. To top it off I heated some frozen peas, garlic, and diced prosciutto in a skillet together. Tossed in with the pasta. For the side I broiled tomato slices with basil, salt, pepper and fresh mozzarella. Easy and light dinner. It was prepared in about 20 minutes. The only preparation was washing and slicing the tomatoes and mincing garlic and slicing the fresh mozzarella.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Drain the pasta and serve the chicken and sauce over the pasta. upload some bagged salad and Italian bread and there’s a meal.

This is white trash cookin' :)
1 lb ground beef
1 onion, diced
1 clove garlic, minced
1-2 potatoes, diced
2-3 carrots, sliced
Salt and Pepper to taste
Brown ground beef, toss in diced onion and a little garlic iffa you like. Toss potatoes and carrots in skillet with beef and onion, add about half a cup water, cover and cook on low 'til potatoes are tender, about 15 minutes. Stir occasionally. Serve with green salad and cottage cheeze. YUMMY and EASY

oh its called chicken encalatas (spelling im not sure)
anyways... get some chicken breats chopp em up and cook them.... then do some veggies green pepper, green onion, red onion, tomoatoe whatever turns you on. throw some seasoning salt in while they are cooking (always remember to put butter in the pan.. NOT OIL...
then ones all that is cooked take about 8 or 9 tortilla shells (depending on how many you will be serving) lay them out.
put shredded cheddar cheese (save some for after) , salsa, the chicken, and veggies in the tortilla. roll them up and place them in a long pan.
take the remaining cheddar cheese and sprinkle it on top of the shells in the pan.... along with more salsa, and melted cream cheese..... put that in the oven on 350 for about 20 minutes (just until the cheese is throughly melted)
and serve. simple. easy and good to eat :)

Hmm... BBQ chicken drumsticks?
Boil them for a half hour with peppercorns and a bay leaf, then drain. Coat in BBQ sauce and grill until the sauce forms a glaze.
We used to have this with corn all the time. Drumsticks are cheap and simple to make.
