My parents are always working..so I barely ever get a home cooked meal. What do you suggust that is easy to make, and good to eat? (healthy)

Not sure how healthy it is but here is one of my daughter's favorite to make and to eat.First put some ground beef in a bowl,salt and pepper to taste,add some cut up seasonings(I cut mine up)daughter uses the cut up kind in produce dept.either will work(has onions,green bell peppers,garlic and green onions in it.)add about 1 tsp. worcestershire sauce,mix together and for in patties(don't work w/ meat too long it'll become tough)In lg. skillet begin to brown on each side a couple of mins. each side.remove when done if you have more to brown.in empty pan add 2 cups cold water,stirring the bottom to get all the tasty little pieces loose,add 2 packs instant brown gravy ,stir for 2 minutes.put patties back in gravy,stir gravy ontop of them ,cover and let simmer for 30-45 minutes.MakeBetty Crocker butter and herb mashed potatoes on the side and seasoned green beans.Drain a can og cut green beans,in sm.pot put 2 tsp.butter,1/2 tsp minced garlic and some real bacon bits(for salads) let cook a couple of mins.Add beans, salt and pepper to taste and stir,heat till hot.Serve.We make the potatoes as directed on pkg.Hope this helps.Also if you like mexican food, there is an easy, fast recipe for enchiladas on the can of Old ElPaso enchilada sauce.

This is SO easy, and you can do tons of yummy variations:

Buy a bag of frozen veggie stir-fry, whatever kind you like, and whatever meat you want.

Cut up the meat into bite-size pieces.
Heat up a big skillet (medium high heat).
Add the meat and cook until done (when the juices in the meat run clear).
Pour the frozen veggies in the skillet and add a little water (maybe 1/2 cup) to help them cook.

Add whatever seasonings you like: Salt/pepper, Tony Cachere's Creole Spice, Italian seasonings. Whatever. Just don't over-do it.

When the veggies are done, dinner's ready!
If you want, you can add some Velveeta cheese inthe last few minutes. It melts into a yummy sauce.

Get some Ziploc containers or something similar, and make large batches of a couple of things on the weekend. Then you've got food for the whole week, and you don't have to worry about making anything or cleaning up through the week either. This is what we do - with a baby in the house we don't have time for cooking anymore. Good choices are tuna casserole, chili, soups, pasta, or meatloaf.

If you are just starting out, try combining canned and packaged foods you like. For instance, if you like mexican flavors, try taco salad. You will need to make a salad. I use lettuce and tomato. Then add canned chili (for the easy version) and tortillia or corn chips. It's really good. There are alot of canned soups that are really healthy that you can eat with bread or crackers for a complete meal.

Get a crock pot!! Best investment for busy people!! One easy recipe is take a roast put about three tablespoons of lea & perron(?spelling) add acan french cut green beans (pour out juice) and two cans italian styled tomatoes , cook on low all day then serve over rice !! Love this stuff!! Its cooking at home right now!:)

Yeah making a big batch on the weekend is the way to go.

But you can also just buy some chicken breasts and sautee them up in a fry pan with some butter and oil. Then throw some spinach in and wilt it down real fast. The thing is to have ingredients on hand. Stock up a pantry and you'll have lots of versatility.

I don't know what kind of food you like or how much cooking you're up for but whenever I am in a rush or don't feel like whipping up some elaborate meal I like to make a couple of things:

Pasta Primavera:
-Pkg of pasta (whatever kind you like)
-Jar of alfredo sauce
-veggies (i recommend frozen because it's quick) (i like carrots, broccoli and cauliflower..but it's really up to you)

---Just boil the pasta, heat up the alfredo sauce, and cook the veggies (i like to saute them in a little olive oil, but you could even just microwave them)...Mix it all together and Voila! you've got a meal..if you feel up to it, adding some sliced chicken breast is good, too.

OR

Stir Fry

-Frozen veggies work here, too if you want
-Rice... you could even buy the quick kind that is microwaveable
-Sauce is optional and up to you.. soy sauce is typical, and there are several stir fry sauces available in grocery stores

--Cook the rice, saute the veggies (in the sauce if you choose to use one)...mix together and you're set.

another easy, light meal is a simple tuna or chicken salad.. you can eat it as a sandwich, with crackers or just as a salad.. you can buy canned, diced chicken breast on the same isle as canned tuna fish in most grocery stores...although the canned chicken tends to not have much flavor, so you'll want to add a decent amount of seasoning to your mixture.

I really like salad. You can add a hard boiled egg to it or some Perdue already cooked chicken strips.

A grilled cheese and tomato sandwich is good.

How about fruit salad?

Pasta with vegetables. Just add sliced zucchini to the pasta while it is cooking and then top with grated cheese when it is done.

I have a great chicken recipe, first take boneless chicken and put Dijon mustard on the top(spread it on both side) bake a 350 for 20 minutes, then put salsa over the top and shredded cheddar or Mexican or taco cheese, and bake for another 10 minutes ..make sure the chicken is cooked through and serve over rice its so good and juicy!!

One of my fave quick meals is quacamole tacos!

Fry small corn tortillas in a pan with a tiny bit of oil, just until warm and slightly browned.

Mix up avocado, lime juice (fresh), and salt to taste

Chop tomatoes

open a can of beans and rinse.

take your warm tortilla and add guacamole, tomato, beans, cheese, lettuce, or whatever else you like. I usually drizzle some hot sauce and squueze lime juice over the whole thing.
