Chocolate Mousse-----
6 oz semisweet chocolate chips --
1 or chunks
5 tablespoon boiling water
4 eggs -- separated
2 tablespoon dark rum -- (or coffee or
1 liquer
Graham Cracker Crust-----
15 graham crackers
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 cup butter -- melted
Put the chocolate in a blender on high for 6 seconds (or so). Scrape the sides of the blender with a knife. Add the water and blend on high for 10 seconds. Then add the yolks and liquer/coffee and blend until smooth. Meanwhile, beat the egg ehites to stiffness. Fold the chocolate into the egg whites. Pour mousse into cups or into the graham crakcer crust. It makes about 4-6 servings. Break the crackers into a blender and blend into crumbs. Place the crumbs into a bowl. Stir in the sugar, cinnamon and add the butter and mix. Press into a pie plate and chill before adding filling. I cheated and bought a Keebler shell. I brushed it with egg white and baked it at 350 for 5 minutes. I guess you could do that with this crust, never tried. Your standard toll-house chocolate works fine for the mousse but the Ghirardelli chocolate made my knees weak! I also used anisette instead of rum. You should have seen my kitchen! Flour and chocolate EVERYWHERE! At least I got to lick the bowl

Frankie & Benny's Boston Brownie Explosion
I'm really not a big fan of deserts but oh my god is that one amazing desert – even if it is really expensive.
It is a brownie – a real brownie, so is it chewy and melt-in-the-mouth, not just a cake called a brownie because it is brown. It has nice fresh summer fruits, summer fruits sauce, vanilla ice cream, a mass of whipped cream, chocolate sauce, tiny toffee pieces, meringue, and wafer – if memory serves. It's a perfect mix of chocolate-goodness, cream and fruity sauce.
It fills a plate and I couldn't even finish it, and I can normally scoff down any food put in front of me, I felt full as anything but still kept going back for more until my partner finally took it off me for the waitress to take away before I made myself sick with eating so much of the wonderfully sweet yummyness of it.

This is one of the easiest no-bake chocolate pudding types recipes in my collection:
Chocolate Pots de Creme
2/3 cup whole milk
1 egg
2 tablespoons sugar
Pinch salt
1 cup semi-sweet chocolate chips
2 tablespoons hazelnut liqueur or dark rum
4 demitasse cups
1 cup whipping cream
2 tablespoons sugar
Heat milk in a small pan over moderate heat until it comes to a boil.
In blender or food processor combine egg, sugar, a pinch of salt, semisweet chips, and liqueur. Run processor or turn on blender to low setting. Pour in boiling milk in a slow stream. The hot milk will cook egg and melt chocolate. Process or blend 1 minute, until smooth.

The best pudding would have to be hands down Butterscotch it is great. My father used to make it for me when ever I didn't feel well. It gives me warm memories of him, now that my daddy's no longer with us. Butterscotch pudding is like getting a warm hug from my dad.

In the colder months I like nothing more than Sticky Toffee Pudding with custard.
Come summertime though, Creme Brulee straight from the fridge.....Damn! I'm hungry now ;o)

A very sticky and hot upside down cake that my father made years ago. He's made others since but never quite got it the same since. Home made rice pudding with strawberry jam is good to. Oh, I'm hungry now.

Bread Pudding
Recipe
take 4 bread slices and dip them in 1 cup milk and 4 table spoon sugar. after 4 hours beat the mixture. haet 1/4 cup oil in a pan and add mixture in it. cook till tender brown. place the pudding in bowl. add 2 spoon coca powder and 3 spoon sugar in 1/2 cup of water and stir till thick. pour it over pudding. chill it and enjoy

Bananas Foster Served at Brennan's Restaurant in New Orleans. Any desert with fruit, loquor and Ice Cream flambed and served table side is great and that one is exceptional!
