Fried Green Tomatoes
INGREDIENTS:
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
5 green tomatoes, sliced 1/2 inch thick
1 cup crushed saltine crackers
2 eggs, beaten
1/2 cup butter

DIRECTIONS:
In a small bowl, stir together the flour, salt and pepper. Place the crushed saltine crackers in another bowl, and the beaten eggs in a third bowl.
Melt the butter in a large skillet over medium heat. Dip each tomato slice in the egg to coat, then in the flour mixture. Dip the floured tomato slice back into the egg, and then into the cracker crumbs. Place the coated tomato slices in the hot skillet, and fry until golden brown on each side, about 3 to 5 minutes per side. Add more butter to the pan, if necessary. Serve hot!

Fried Green Tomatoes
Makes 6 servings
Ingredients:
6 green tomatoes
1/2 cup buttermilk
1 cup panko
1/2 cup cornmeal
1/2/2 cup flour
1/2 cup grated Vella Dry Jack cheese (can substitute Parmesan)
1 1/2 teaspoon chipotle powder
1 1/2 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
4 cups oil
Preparation:
Slice off ends of tomatoes and portion remainder into three slices per tomato. Place the buttermilk in a shallow bowl.
In another bowl mix together panko, cornmeal, flour, cheese, chipotle, paprika, salt and pepper.
In a heavy bottom skillet, heat oil up to 350 degrees. Place green tomatoes in buttermilk, allow excess buttermilk to fall free, and toss in flour mixture. Place tomatoes in oil and cook for 1 minute on each side, remove and season lightly with salt and pepper.
After frying all the tomatoes, place three on a plate and garnish with Arugula Pesto and Tomato Relish (recipes follow) and serve immediately.

Sweet's Fried Green Tomatoes
When choosing tomatoes for this recipe choose a nice
(really firm )tomato.Preferably the tomato is very light green
in color and sounds almost crispy when sliced.
Get your well seasoned black skillet out (I told ya to get one...*S*)
and put enough oil in it to cover the bottom (about 1/4 inch thick).
I personally don't like to have my tomatoes covered when frying. Get the
oil hot....not too hot to burn but hot enough
to sizzle when you put the tomatoes into it.
Next step.....LOL...I am writing this off the top of my head....can you tell???
Grab a bag...any kind...I use a giant baggie..you use anything you wish.
Slice your green tomatoes (normal thickness)
Pour into the bag:
Flour
Season Salt (or any of your fave seasonings)
Pepper (How much?....Your preference)
Have two bowls ready.
One bowl crack a couple of eggs and stir well.
The second bowl just pour some flour into it.
Order of preparation:
Dip sliced tomato into flour in bowl
Then into the beaten egg
and last-- into the bag with flour/season salt/pepper mixture.
When your bag has enough tomatoes in it to shake....then shake vigorously...
From this bag put coated tomatos into the hot oil in skillet.
The tomatoes will not take long to cook....just check them in a few minutes and turn...
after they are cooked on both sides to your preference, drain on a paper towel.
This method produces a crispy, fried green tomato

1/8 teaspoon pepper
3 to 4 green tomatoes, cut into 1/2-inch slices
Cooking oil
Combine flour, cornmeal, Parmesan cheese, oregano, salt and pepper. Coat tomato slices with flour mixture. In a skillet, heat oil over medium. Fry tomatoes for 2-3 minutes per side until tender and lightly browned. Drain on paper towels. Serve immediately.

I mix salt, pepper, sugar and a little galic powder in with flour and corn meal............this is the way my Grandmother did them and we are from NC so we are pretty southern.........be very careful frying them (they have to be green or just turning pink) to let them get done before trying to turn them. Probably have to change the oil a couple times if frying many. She also made fried green tomato gravy.

Slice tomatoes into rings.
Mix eggs, corn meal or flour and salt and pepper into runny dough mixture.
bread slices in mix and fry in bacon grease untill brown.
You can use seasoning salts, but too much salt really kills it.

use 3/4 corn meal, 1/4 flour(helps it stick together), mix beaten egg with milk, dip sliced tomatoes in milk mixture and then in corn meal mixture. do it again if you like really crunchy then fry up with salt and pepper to taste serve hot!!!
