You can eat carp but they are full of bones and have a muddy taste. There is however one piece of meat on the carp called the tender which is a good cut of fish. It lays behind the head and down the spine and is generally not as fishy or muddy tasting. I have heard that it is good broiled, smoked, and even grilled.

We took carp from the rivers and put them in a 1000 gallon horse water trough to feed whole kernal corn to. After a month of this we took them out -butchered and cleaned them to put in a smoker. People would come from town to buy the fish from us every weekend. Putting the carp in the tank helped to clear the muddy flavor from the meat. The corn helped to fatten and sweeten the fish.

Maybe to larger fish...carp are bottomfeeders...gross!
