here is an idea:
If the tomatoes are whole, then go ahead and chop them/crush them. Season them with basil, oregano, salt/pepper, and a pinch of sugar.
Marinate your chicken as your normally would but preferably use some Italian seasoning/flavor so that it will tie in well with the sauce.
In a medium hot pan, saute the chicken breast with fresh garlic and chopped onion in a couple tablespoons of olive oil. you don't want to cook the chicken all the way, you simply want to brown it on the outside just enough to absorb the olive oil and onion/garlic flavor.
Okay....put the chicken (garlic and onions, too) in a baking dish and smother it with your tomato sauce mixture. Bake it at 350 for 25-30 minutes. While the chicken is baking, boil up some pasta. Serve the chicken breast (with sauce) over a bed of pasta and top with freshly chopped olives and grated parmesan cheese.

Marinade the chicken in lite soy sauce, garlic and onion powder at least 30 min, If you can get a hold of red ,green or yellow peppers, onions, you can make a colorful and delicious relish sauce to top off chicken. Grill chicken breast in grill if possible to lock in moisture, grill peppers and onion& tomatoes to sweeten veggies. Dice veggies into salsa relish spice with salt pepper Or garlic salt if you have.Serve chicken topped off with salsa, Enjoy!

I would put the chicken in the oven with the can of tomatoes, add mushrooms, onions and green peppers. I make this all the time and put in over rice. So simple but yet tastes so good.

roma tomatoes are good baked, it brings out the flavor. Try topping your chicken with feta cheese, kalamata olives and roma tomatoes and bake. Its a nice greek flare.
Or you could make chicken breats with a penne vodka sauce and use the tomatoes in the sauce.
