Does anyone have a great simple recipe for some juicy gulf prawns i have. want to use them as a starter for two tonight.
Preferably with minimal ingredients, lime, garlic etc??

Any Brandy? Soak them in Brandy and salt to taste for 1/2 to 1 hr... boil them in this marinade... take the prawns out, u can still drink the brandy soup (most asians like that).

Serve prawns with lime wedges on side (as garnish/for extra seasoning)... mash garlic with soy sauce(chillis/red peppers optional), serve this sauce on side for dipping!

Garlic Lime Prawns


Ingredients:
6 - 8 each jumbo prawns, shell-on, split down the back
3 cloves garlic, crushed
1 lime, juiced
1/2 teaspoon lime zest
3 tablespoons butter, softened
1/2 teaspoon cracked black pepper
1 tablespoon cilantro, chopped
2 tablespoons white wine or chicken stock
1 shallot, fine chopped

Method:
In a heavy sauté pan over medium-high heat, place garlic, shallots and 1/2 of the butter. Bring to temperature and add the shrimp, shell-side up. Cook for 1 1/2 minutes and turn. Add lime juice and wine and cook for an additional 1 minutes. Add the cilantro, remaining butter, black pepper and lime zest and cook until the butter melts (don't let butter boil).
Serve immediately over steamed white rice.

Prawns with ginger. Serves 6.

Ingredients: 2 tbs oil, 1lb cooked peeled prawns, 2" root ginger, peeled and chopped, 1 tbs chopped fresh coriander leaves, 6 spring onions, trimmed and chopped, 1 papaya peeled seeded and chopped, 3 tbs lime juice, 1 tsp grated lime rind. Mixed salad leaves to serve.

Fry the prawns, ginger and spring onions in the oil for 3 minutes. Add the papaya, lime rind and juice, stir and cook 2 more minutes. Serve on a bed of mixed salad leaves sprinkled with coriander.

Prawn and avocado tempura 'cocktail' with sweet chilli and cucumber dip Ingredients For the 'cocktail' sunflower or vegetable oil, for deep-frying 50g/2oz plain flour, plus 3 tbsp extra, for dusting 1 tsp cornflour pinch salt 100ml/3½fl oz cold sparkling water 8 large raw prawns, peeled, but tail left on if possible 1 small ripe avocado, peeled and sliced For the sweet chilli dip 75ml/2½fl oz rice vinegar 75g/2½oz granulated sugar ½ red chilli, de-seeded and finely chopped pinch salt 5cm/2in piece of cucumber 1 tbsp fresh coriander, finely chopped Method 1. Heat a heavy bottomed saucepan full of sunflower or vegetable oil, until a breadcrumb sizzles in it. (CAUTION: hot oil can be dangerous! Do not leave unattended.) 2. For the 'cocktail' place the flour, cornflour and salt in a bowl and mix in the sparkling water with a chopstick or handle of a wooden spoon, until it is just combined. The mixture should be thin and slightly lumpy, which will give you a lovely crisp batter. 3. When the oil is ready, dust the prawns and avocado in the three tablespoons of flour, and then dip briefly into the batter. Drop each battered item carefully into the oil, a few at a time, and cook for just 1-2 minutes, until pale golden and crisp. 4. Carefully remove the tempura pieces with a slotted spoon, drain on kitchen paper and serve straightaway with sweet chilli and cucumber dipping sauce. 5. For the sweet chilli dip, place the rice vinegar and sugar in a small pan over a high heat and bring to the boil for 1 minute, or until it thickens slightly. 6. Add the chilli and salt and remove from the heat and leave to cool. 7. Halve the cucumber length-ways and scoop out the seeds. Finely chop the cucumber and add to the chilli mixture. 8. Add the chopped coriander and transfer to a dipping bowl. Serve with the tempura.

Marinate Them in a prepared pesto for about 1/2 hour then grill. Very tasty!

Split them and stuff with a little crab and cheese stuffing....broil till cheese is melted......or merinade and grill on skewers
