Thanks everyone! I broiled it, and my hubby liked it even though I used too much lemon juice. :P Doh!

Given its texture/consistency, grilling is actually the preferred method of preparing a shark steak. However, of the options you listed, broiling will give you the best results.

Might I also recommend that you use a lemon-vinaigrette seasoning or sauce to top it off.

Broiled or grilled, best to brush with some olive oil before cooking to prevent dry out, and of course as with any fish don't overcook. Shark is great but don't eat it too often as it contains high levels of mercury.

Any large fish-swordfish, shark, mahi mahi, etc that is in "steak" form is best grilled--depending on the flavor of the meat you might marinate for a few minutes in soy or terriyaki or worchestershire sauce (e.g. sometimes shark needs a marinade--but swordfish very rarely needs one)--at the end of grilling, baste with garlic butter.

Second best is bake. With baking you lose the grill flavor, but you have more options of adding ingredients. One technique is to wrap the fish in foil with herbs and veggies.

Well, it depends. If you're Chinese, I would suggest marinating it in oil, ginger and scallions. Before you marinate, fillet the shark in small pieces. Then, do a hot pot; whatever flavor soup you like. My mom always make the soup out of water, tomatoes, scallions and oil.
