How come my hot pocket is cold in the middle and molten on the edges?

Cooking from the "inside out" is not quite true.A microwave oven cooks by exciting the food molecules especially water moisture molecules so that they rub together and generate heat internally.Microwave cooking sometimes takes a little effort to get even cooking and some foods and types of foods cook better than others. Hopefully your micro is equipped with a revolving turntable to evenly distribute the microwaves throughout the entire food plate. Sometimes just covering the food with a paper towel or plate evens out the cooking too.Sometimes you have to turn foods over for more even cooking but mostly you don't have to do that. Try also reducing the power and increasing the cooking time at lower power. Your hot pocket probably contains less moisture on the edges and therefore almost burns while the inside remains relatively cold which is why you will have to experiment a little as mentioned above.

Your microwaves may have low wattage than a higher priced one. Check to see what you have. It should cook from the inside out, but it sounds as though your microwave is either faulty or low wattage.

No, it cooks from the outside in. You should use a turntable so your food will cook evenly, or turn the food if you don't have one during the cooking process.
