Iodine is vital to the proper functioning of the thyroid gland and the prevention of goiter. In 1924 Morton became the first company to produce iodized salt for the table in order to reduce the incidence of simple goiter. Adding a tasteless product that was used by virtually every household in 1920's America was a simple treatment for widespread cases of goiter. Goiter, when left untreated, can cause life-threatening complications.

People who eat fish or seafood regularly, wouldn't need extra iodine, as the amount needed by the thyroid gland is really small, some milligrams a day, but to ensure the amount needed to those who lived far from the sea, iodine was added to regular salt, as a public heath measure, un USA and in other countries also..

People used to get horrible illnesses from iodine deficiency-- once they started adding iodine to salt, they are pretty much unheard of now in the US.

It's for people to make sure they get enough iodine in their diets. Usually, recipes calling for salt is for iodine table salt.

its a nutrition issue... since iodine is essential to the prevention of several malnutrition diseases, the industry decided to spike salt with it since everyone uses salt in order to introduce amount of it in the diet
