Layered Mexican-Style Casserole
Makes 6 servings


Ingredients
2 cans (15-1/2 ounces each) hominy,* drained
1 can (about 15 ounces) black beans, rinsed and drained
1 can (about 14 ounces) diced tomatoes with garlic, basil and oregano, undrained
1 cup thick and chunky salsa
1 can (6 ounces) tomato paste
1/2 teaspoon ground cumin
3 (9-inch) flour tortillas
2 cups (8 ounces) shredded Monterey Jack cheese
1/4 cup sliced black olives

*Hominy is corn that has been treated to remove the germ and hull. It can be found with the canned vegetables or beans in most supermarkets.


Prep Time 15 minutes
Cook Time 6 to 8 hours (LOW) • 3 to 4 hours (HIGH)




Slow Cooker Directions
1. Prepare foil handles (see below). Spray slow cooker with nonstick cooking spray.

2. Combine hominy, beans, tomatoes with juice, salsa, tomato paste and cumin in large bowl.

3. Press one tortilla in bottom of slow cooker. (Edges of tortilla may turn up slightly.) Top with one third of hominy mixture and one third of cheese. Repeat layers. Press remaining tortilla on top. Top with remaining hominy mixture. Set aside remaining cheese.

4. Cover; cook on LOW 6 to 8 hours. Sprinkle with remaining cheese and olives. Cover; let stand 5 minutes. Pull out tortilla stack with foil handles.


Foil Handles Tear off three 18x2-inch strips of heavy-duty foil or use regular foil folded to double thickness. Crisscross foil strips in spoke design and place into slow cooker to make lifting of tortilla stack easier.

Pork Loin! Yum!

1/2 Pork Loin
1 Can Rotel Tomatos & Green Chiles
1 Medium Onion - Sliced
2 Teaspoons Minced Garlic
1 Teaspoon Chili Powder
1 Teaspoon Cumin
Sea Salt (I just grind some over it)

Put some of the onion, garlic and spices in the bottom. Add meat. Pour Rotel over. Add remainder of spices, onion and garlic.

Pretty tasty!

The one and only>>>roast!!! Get a med sized roast, add two cans beef broth, then put in 1 or 2 (depending on taste) packages of lipton onion soup mix. Put it on low and cook for at least 8 hours. The meat will absolutely fall apart, and the best part is you can take the left overs and make Rost and egg noodles>>>> the next day or day after, take your left over roast, cut into chunks(make sure you saved the "juice") two tablespoons of cornstartch and put it in a large pot. Cook over med/high heat, boiling down and adding water to thicken, then add a large package of wide egg noodles (I use No Yolks brand) and cook until noodles are tender. Another family favorite is BBQ on a bun. Take @ 4lbs of brisket, and one can of beef broth, cook for 4 hours, take off bottom fat, then cook for one hour. Shredd meat, add 1/2 bottle of BBQ sauce and 1/2 cup brown sugar. Cook just long enough to mix flavors together. Serve with onions, pickle may and/or mustard. Bonus:enough for at least two meals.

Roast! Rinse meat and spice meat ( like with tenderizer powder), add potatoes ( the mini ones are the best), carrots, celery, onions (for taste) and some beef broth (not too much). Leave all day, I like the natural tastes, so sometimes I leave out the tenderizer and salt to taste. This is so good, especially for kids, it builds memories.

2 skinless chicken breasts,1 onion, 1 can of cream of mushroom soup and 1 can of mushroom pieces.undrained......I start it first thing in the morning and serve it about 10 hrs later when home from work with rice
