Im looking for a really good recipe to cook for my parents tomorrow night. It'll be them and my two younger sisters. I have a ton of boneless skinless chicken breast and would like to use that to make a meal that will knock their socks off. We love Italian food (especially creamy sauces) but I'd like to try something new. I've also got some ground turkey...any ideas?

Chicken Scallopini Marsala

3 oz. fresh mushrooms
3 oz. olive oil
Salt and pepper to taste
10 oz. chicken, thinly sliced or pounded
Flour
Garlic powder
1 1/2 oz. Marsala wine
Oregano

Saute mushrooms until almost tender in 1 1/2 ounces of olive oil, and drain. Salt and pepper the chicken slices and lightly dip in flour. Brown the slices in the remaining oil; add a pinch of garlic. When lightly browned, add mushrooms, wine and a dash of oregano. Simmer for 3 or 4 minutes in a covered saucepan. Serves 2. Garnish with lemon slices. Change amounts for the number of servings you want to make.

Serve with a pasta, such as spaghetti carbonara:

Spaghetti Carbonara

1 1/2 to 2 c. fresh grated parmigano or Asigo cheese
6 to 8 slices bacon (preferably pancetta)
1/2 to 2/3 c. half and half
2 to 3 cloves crushed garlic
2 to 3 tbsp. white wine

Use more or less cream if you want it wetter or drier. Fry bacon. Remove and crumble it. Saute' garlic in grease. Put in white wine to de-glaze. May want to drain some grease before saute' garlic. Cook pasta while doing this, then drain and put back in pot. Add bacon, wine and garlic, cheese, cream, stirring constantly. Add bacon crumbled up.

Also serve with mozzarella & tomato & basil salad and Bruschetta. A good Valpolcella wine is nice with this menu!

Throw the chicken in a buttered baking dish with some fresh rosemary, garlic (not cut up), and onion (cut into rings). By 'some' rosemary I mean a small handful - nothing wimpy like a tablespoon. Add about 1/2 cup of water to the bottom of the pan, cover with tinfoil, and bake until done (look up proper cooking temperatures for chicken, it may've changed since I worked as a cook).

If you want to reserve the grease and use it (broth-stuff) to make rice or something, go for it. You could add green beans (fresh and cooked, not canned) or asparagus or something, and a nice white wine to go with the rosemary... You could also make some sort of balsamic vinegar sauce or reduction or something to drizzle on top, if you want to get really fancy :)

Just remember that cooking is all about experimenting. I don't use measuring cups, and recipes are suggestions :)

Hey Gal,
Got the answer..

Chicken and Noodles.
Cut Up about 8 Chicken breast ( if you have that many ), Bring to a boil and cook for about 1/2 hour.

Cool the Chicken and then cut it up into pieces of about 1/2 inch.
Desolve and Add 8 Chicken Bolion Cubes to the chicken.

Bring to a boil and add your noodles.. More than like 1 1/2 packages... Boil on medium until done.

Serve with a salad, veggie, and ice cream for desert.

( you might want to have an extra pot of boiling water ready just in case you need more water while the noodles boil) Not a lot,

This is the most easy recipe but it is always a hit whenever I make it for company.

Buy the hidden valley ranch packets and Italian bread crumbs.

Make the ranch as follows on the back.
Dip you chicken into it and then into the bread crumbs.
Bake at 350 until chicken is cooked all the way through.

I usually serve green beans, red skin potatoes and rolls with it. It's a real crowd pleas er!

How about Risotto:

In a pan brown the chicken Use like 2 TBS olive oil
after you brown the chicken remove from pan

Add 3 cloves chopped garlic
1 onion chopped
1 tbs parsley
2 stalks celery

after all of that is all browned add Rice, chicken stock, and the browned chicken.

Let cook well until all is cooked.

Put on plate, top with romano cheese, add more chopped parsley for color and enjoy.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

3 cups of rice
I can of english peas
4 or 5 large breast. boiled
2 cans cream of mushroom or chicken

boil you chicken set to the side to cool. cook rice and english peas. spread both into the bottom of a casserole dish, cut up chicken on top, add fresh mushrooms if you wish. prepare cream of chicken soup, pour evenly over the top and bake about 30-45 minutes and you are a one hit wonder.
I serve mine with a salad and desert at the end. also if you family like onions one whole onion chopped is good as well. add that the same time as the mushrooms.

Really easy: Baked BBQ chicken. Place chicken in cassarole dish and season (salt and pepper - + anything else you like) add BBQ sauce, cover with Reynolds Wrap and throw into the oven about 350 for about an hour. It is so juicy and tender. Even easier is if you have a cooking bag - no mess! You could also add any kinds of veggies and cook them up along with the chicken.

There are great web sites that can help, like kraftfoods.com or ivillage.com that have recipe finders. You can type in the few ingredients that you have and it will give you all the recipes that contain those items. I have tried all sorts from both sites and they have all turned out great! My favourite creamy chicken recipe is:

Place chicken breast in casserole dish. Sprinkle with pepper. Cut up some garlic cloves and place on top chicken. Open a can of your favourite cream soup (cream of broccoli, or mushroom...) and pour it over the chicken. cover with aluminium foil and bake for 50 min....the chicken will be so flavorful and moist...serve with fav. veg.(maybe whichever veg you used in the cream soup) and rice.

Hey, try this: marinade the chicken in Teriyaki overnight. Chop chicken, cook with stir fry mix, make white rice. Serve with hot tea and iced tea (cold brew). It is figure friendly and for a treat, pass out meal with fortune cookies! I do it all the time at home.
