There are 5 stages of sleep.
1) SWS or NREM, transition state between sleep and wakefulness
2) SWS or NREM, peaks of brain waves become higher and higher (sleep spindles)
3) SWS or NREM, also called delta sleep or deep sleep
4) SWS or NREM, also called delta sleep or deep sleep
5) REM, beta waves have a high frequency and occur when the brain is quite active, both in REM sleep and while awake
They analyze how long you sleep, how many times you enter the different stages of sleep and for how long, etc. They do not analyze the dreams themselves. There is no way to tell what a person is dreaming, nor is there any scientific evidence that dreams have any meaning in the waking world.

Through brain wave activity, the mind never sleeps, it is always functioning. In sleep it goes through stages which is why we dream, to make sense of it all, otherwise we all go mad.
