We have eaten all the boiled, steamed, fried, and sauted okra we can stand. I am going to try tonight making it with some bacon that I read about, but I need some more ideas!

Take fried potatos, fried okra, browned polish sausage, (sauted onion, bell pepper, and mushrooms, with a little bit of garlic) mix together

Okra is a pretty versatile vegetable. There are Indian curries which use okra as an ingredient. The other day, my family and I had dinner at what they call a Brazilian churrascaria, and lo and behold, there was okra stir fried with salted soybeans (I think a dash of minced chilli would really spice up that dish a lot). Anyway, I did a google on okra dishes..and maybe you can get some from the list here..

Okra Salad

INGREDIENTS:
3 slices bacon
cut okra
1 onion, chopped
1 green bell pepper, seeded and diced
1 medium tomato, diced

1/3 cup white sugar
1/4 cup corn oil
1/4 cup white vinegar

--------------------------------------------------------------------------------

DIRECTIONS:
Place bacon in a large skillet over medium heat. Cook until evenly browned, then remove to paper towels to drain. Pour off most of the bacon grease, leaving a thin coating on the pan. Add okra to the bacon grease in the skillet, and fry until tender, about 5 minutes. Transfer the okra to a salad bowl, and toss with the onion, green pepper, and tomato. Crumble in the bacon.
In a small bowl, whisk together the sugar, corn oil, and vinegar until the sugar has dissolved. Pour over the salad, and toss to coat. Chill for 30 minutes before serving.

fried okra gumbo is delicious

cut your onke side ways, dice up whole fresh tomatoes and add in some sliced onions, mix with a seasones cornmeal mixture and fri like you would fried potatoes, with salt , pepper, it goes with good ole southern foods like pinto beans and collards, hope you try, and hope you enjoy this as much as my family has for years and years.

Okra is very tasty simmered in spaghetti sauce. Also, what about a gumbo?

Soup! Any recipe for Gumbo Soup will have okra. Thats what makes it gumbo.

Okra and tomatoes or a gumbo. We also like it cooked in black eyed peas or greens.

How about donating some to a food bank, local mission, or put a sign on the front lawn that says "free".

If you want to keep it, try preserving it either by Canning itself, or in sauces, stews, etc and canning it. Its a welcome treat in the middle of winter.
