im making chicken fajhitas for my party saturday...what should i use for a marinade?

For the most authentic flavor, you want to use lime juice with your favorite "south of the border" spices.
My recipe goes something like this (I cook by approximations, so I don't have real measurements; I go by what looks/tastes right):

Juice from 3-4 limes
2-3 tablespoons of your favorite oil (I usually use either an extra light or a "pure" olive oil. They're different from the Extra Virgin, not quite as strong olive flavor)
Onion or onion powder
Crushed/minced/pressed garlic or garlic powder
1-2 peppers of your favorite variety, chopped up, with the seeds
Cilantro, probably about half a bunch, mostly leaves (stems aren't as good, but it's not always worth the hassle of completely eliminating them)
Chili powder
Black pepper
Cumin
Add water with about 1 tsp of salt until you have about two cups

The amounts will depend on your preferences and how much chicken you're cooking. I listed the ingredients in the order of most to least. This should be enough for at least 2 pounds of chicken if you're using the Ziploc bag, so adjust accordingly ('cause you need more if you're putting them in a dish to marinate).

Mix these together, and put in a gallon-size Ziploc bag with the chicken. Press out as much air as you can, zip close, and place it in the fridge, turning over every so often. You should marinate for at least an hour, preferably more. Time the rotations so that the bag spends half the time lying on each side.

You could marinade them in margarita mix with or without a shot of tequila. Just don't let them marinade for more than a few hours, since the high acid content will partially 'cook' them.

I use a 1/2 cup white wine mixed with two fresh squeezed limes, mix in some cilantro, fresh garlic and black pepper. This is for a pound of chicken breasts.

You don't need a marinade, keep them moist, but use a good spice rub with lots of cumin, pepper corn, and chili. Cook with bell peppers and onions!

I always liked marinading them in salsa, and cooking them in it as well. Any sort of Salsa will do, we like hot here. I cube or slice it and marinade it in salsa. Works great.. tastes great and it's pretty easy.

McCormick's has an excellent fajita marinade,its easy and very good,.It comes in a powder or liquid form.

i would marinade them in regular HOT Sause. untill time to cook. it's very good. you can add some mince garlic if you want. My girlfriend and i love it like that. it also makes good deep fried chicken tenders

I would use Salsa... I marinate chicken in it all the time and it tastes great!
