Mayo & Relish.

If you look at what you get at a very good seafood restaurant (not the processed -to-death junk you get in a supermarket jar) the answer is clear. Try taking good mayonnaise, add a small touch of that spicy red pepper sauce and a little lemon juice and then add the mix-ins of pickles and onions. The trick with the mix ins is that you have to do them yourself. Don't just open a relish jar which will have soggy pasteurized old bits - chop up sweet pickles to the size pieces you like. Chop a fresh onion to the same size pieces. Throw them in and stir until mixed. Let it sit for a while until the flavors blend. Once you taste that you won't go back to pre-made junk (and as an added bonus you can tell if the seafood is going to be good in a restaurant just by taking a taste of their sauce).

Mayo or Miricle Whip a little sweet or dill pickle relish some minced onion mix together and you got tartar sauce. It's always better the next day though so plan ahead.

Here is a quick and tasty one.

Mayonnaise or Salad dressing (whichever you prefer)
relish
splash of lemon (or vinegar)
salt and pepper

Depending upon how much you need, start with a couple tablespoons of mayo and add relish, usually about 1/2 or a little less of mayo that you used. Then add just a little lemon juice (or vinegar) and use salt and pepper if you like.

If you like it a little sweeter, add just a little bit of juice from the relish jar.

Well, you want a little more flavor than just mayo and relish. Try this:

1 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon minced onion
2 tablespoons lemon juice (optional)
salt and pepper to taste

To a given quantity of mayonnaise add the following.

2 tsp chopped capers
1 tsp fresh chopped tarragon
2 tsp chopped gherkins
2 tsp chopped parsley
1 tbsp tarragon vinegar or lemon juice.

Mix all the ingredients together and allow to stand for 1 hour before using, this allows the flavor to ameliorate.
