Apple sauce and very thinly sliced apples
Add pudding mix (vanilla if you want to keep the yellow color, chocolate if you want it really rich). OR you could make it into a Boston Cream Pie with yellow custard/pudding in the middle and chocolate fudge frosting on top.
Rum...YUM!
What about making a pineapple upside down cake with it? Those are really moist!

What a wonderful cake recipe for a friend or family gathering.
A cake recipe that won't be forgotten
1 box yellow cake mix
1 ~ 15 oz. can mandarin oranges, { drained and reserve the juice }
1 ~ 15 oz. can crushed pineapple
1 cup coconut { optional }
1 cup miniature marshmallows { optional }
1 ~ 8 oz. tub whipped cream topping
1 ~ 3.4 { small } box instant vanilla pudding
Preheat oven to 350°. Prepare cake mix as directed on the box. Gently stir in mandarin oranges. { you can chop the orange segments into big pieces or leave them whole } Pour batter into a greased and floured 9 x 13 baking dish { works best } or 2 ~ 9 inch round spring form cake pans to make a layered cake. Bake at 350° for 25 to 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
After taking the cake out of the oven and it's still hot.... Poke holes over the top of the cake with a fork. Pour the reserved mandarin orange juice evenly over the top of the cake. Leave cake in pan or remove cake from the pan. Let cake cool completely before frosting.
Frosting;
Combine the crushed pineapple, including the juice, coconut, marshmallows and pudding mix in a large mixing bowl. Stir and mix thoroughly. Gently stir in whipped topping. Spread evenly over cooled cake. Enjoy, KEEP CAKE CHILLED.

This is so simple that my 14 yr. old son has been making it for 3 years now on his own and everyone ask for it at holiday meals...
One yellow cake mix
One 16 oz. can of cherry pie filling
One large can of crushed/tidbits pineapple
Half a cup of melted butter
Pour your pie filling and pineapples in the bottom of a square or rectangle cake pan, layered over each other. Take your dry yellow cake mix and pour over your pie filling and pineapples.Now sprinkle with a spoon, the 1/2 cup of melted butter over the dry cake mix. Yes, this is all it takes. Place in oven at 350 F and bake until top is golden brown. You should be able to touch it with your finger and it not stick to you. Enjoy warm or cold.

Dump Cake:Quick, easy & simple!
DUMP CAKE
20 ounces crushed pineapple
16 ounces cherry pie filling
1 package yellow cake mix, dry
1 1/2 sticks butter, sliced
Dump all ingredients into baking pan and bake at 350 F until brown, approximately 1 hour.

that sounds good, but next time you must try this recipe. It is sooo good (and easy)
1 (18.25 ounce) package yellow cake mix
4 eggs
1 cup vegetable oil
1 (11 ounce) can mandarin orange segments
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

In the old cookbooks, like fundraiser books. church's, school's,
etc. will usually include a 'harvey wallbanger' or a 'rum cake'...
These are very simply made and excellent and the basic is the
yellow cake mix.
