Before officiating, I started out many years ago doing wedding arrangements using silk.
The benefits of silk are, you can get ALL your flowers weeks before the wedding, which is one less thing you have to worry about; other than getting them to the wedding. If the order is missing a few, or isn't to your liking, it gives you time to correct it. And you have them forever. Afterwards, I've seen brides put their bouquets in a glass dome for safe keeping.
Real flowers on the other hand smell wonderful. (if fragrance was that important to the bride, I would add fragrance to their bouquets) Some brides just prefer real flowers, & will settle on nothing less. Nature does marvelous work! And sometimes the flower you want, just can't be found in silk. Sometimes you can combine the two.
It's really a matter of your own preference.

Fresh flowers for sure. I know there are benefits to silk (ie they last forever, don't wilt etc) but there is something special about carrying a beautiful bunch of fresh flowers. Especially if they smell great.
Having said that, silk flowers are handy for other things, eg they are good for the cake as some types of real flowers drip sap and you wouldn't want to be eating that!

I prefer silk flowers )they are what I am planning to have for my own wedding) because I want to have my bouquet for years and look at it and for it to still be beautiful after all that time.
