The books were selected by consensus... a process much like determining the canon of classic literature for schools. Here are a couple of websites that discusses the process.

1) They are of apostolic origin or were supervised/dictated by an apostle.
2) They were always accepted by the whole church.
3) They were always widely used by the whole church.
4) They contain nothing contrary to the truths of the faith.
The church, in council with all the bishops and the pope, guided in truth by the Holy Spirit as promised by Jesus Christ, determined infallibly which books belonged in the canon of scripture.
All the other false gospels fail to meet at least one, if not many of the above requirements.

Because they are in accordance with Catholic and Orthodox Tradition. The other thirty are not. Pope Innocent issued the list of books to be read in Church during the service in the year 405, that book is now called the bible. He did anathmatize some of the thirty other gospels but not all, meaning he did not call all of the other gospels false, but rather did not proclaim them part of the apostolic tradition and to be read in the church services. The books of the bible are clearly part of the apostolic tradition, the others, unless anathmatized, may be profitable to read. Unfortunately, all we have left of the other gospels are the gnostic ones.

They aren't considered the truth by everyone. Those were the 4 that were selected for cannon. The funny thing about these writings is they appear to have been written in order and tend to build on one another. It is understood by scholars that the later gospel writers simply rewrote earlier gospels with their own spins.

They aren't the truth. They just fit in with the fiction story of the rest of the bible the best to make it seem true.

And they tell the story of Christ!

The Bible has been heavily edited over the years. It has been changed and modified to reflect the prevailing attitudes of the society that adopted it.
