Lemon-Buttercream Frosting

2/3 cup butter or margarine
9 cups sifted confectioners' sugar (about 2 pounds)
1/2 cup fresh lemon juice
3 teaspoons vanilla
1/2 teaspoon grated lemon zest (yellow part of peel)
3 tablespoons heavy whipping cream

In a bowl, beat butter or margarine till fluffy.

Gradually add 2 cups of the confectioners' sugar, beating well. Slowly add lemon juice, vanilla and lemon zest. Slowly beat in remaining sugar.

Beat in cream (adjust amount, if necessary, until icing spreads easily). Beat 1 full minute for best texture. (It's easiest if you spread it on the cake immediately; the frosting becomes stiffer as it sits).

Try this: 1 cup butter, softened ( 2 sticks, not margarine and not tub butter), 1 cup shortening, 2 cups confectioners sugar, 2 - 7 oz. (14 oz total) containers of Marshmallow Fluff, 2 teaspoons vanilla; Combine all the ingredients into a large mixing bowl and mix until creamy; It will be thick at first but will smooth out and be creamy as you beat it. It is not sugary sweet and of all the recipes I have tried claiming to be like Kroger's Fluffy frosting, this one comes the closest.

Generally it is cheaper and less time costly, just to purchase
it from the store.

I do agree, it is 'great'.

good luck
