Salmon in Vodka Cream Sauce with Green Peppercorns
8 tablespoons butter
1 onion, thinly sliced
1 pound spinach
6 6 ounce salmon fliets
salt and freshly ground pepper
3 tablespoons olive oil
1 1/2 cups whipping cream
1/2 cup vodka
2 tablespoons green peppercorns in water, drained and crushed
3 tablespoons fresh lime juice
1/4 cup snipped fresh chives
Preheat oven to 350F. Combine 4 tablespoons butter and onion in
large Dutch oven. Cover and bake until onion is golden brown,
stirring occasionally, about 45 minutes.
Stir spinach into onion and bake until just wilted, about 3 minutes.
Remove from oven; keep warm.
Season salmon with salt and pepper. Heat oil in heavy large skillet
over high heat. Add salmon in batches and cook about 3 minutes
per side for medium. Transfer to platter. Tent with foil to keep
warm. Pour off excess oil from skillet. Add cream and vodka and
boil until slightly thickened, about 4 minutes. Add green peppercorns
and remaining 4 tablespoons butter and stir until butter is just
melted. Mix in lime juice, season with salt and pepper.
Divide spinach and onion mixture among plates. Top each with salmon
fillet. Spoon sauce over. Sprinkle with snipped fresh chives.

Fresh, chunky tuna steak, marinated in a little lime juice, olive oil, garlic and coriander, cooked quickly on a really hot griddle pan so it's still pink in the middle, with some roasted peppers, some chunky oven roasted potato wedges and a tomato salsa.

Im a bit of a fussy fish eater but I like place and sole grilled in lemon butter with thyme and majoriam with almons and capers! Its very yummy! Must say I do think salmon is over rated!

Halibut with fresh lemon squeezed and sliced on top, add knob butter, and dill tops or any other fresh herb. Bake in oven til just cooked (test by pressing the flesh with a knife, if it flakes easily, it's cooked). Very quick, very healthy, and very few calories!
Actually, I'm no cook so I do the same with all my white fish!

Seabass, lightly fried in olive oil for a minute on each side, served with a brocolli, potato, spring onion and ruccola salad. Surprisingly filling and so delicious.
Also, extremely healthy.

I think its a tie between Calimari and Grouper. Either way its sauteed. Grouper with cajun seasoning and the Calimari with some lemon sauce, dill, etc. Amazing.

My favorite is fried Mullet. Dip em in milk/egg, roll them in cracker crumbs, and deep fry in peanut oil. Oh yeaow. They taste like Glory

Mine has to be smoked Haddock slow cooked in butter, then a twist of parsley on top and a sprinkle of black pepper :O)

fresh cod, battered and deep fried until crispy and golden, accompanied with mushy peas, chips with lots of salt and vinegar and tartare sauce - mmmmmm delicious (see your local chippy for more details)
