conception begins roughly midway between cycles, the most fertile moment probably when temp drops, etc.

Yes. You count from the day your last period started. This isn't very accurate, though. They also get your due date from this. Start day of last period- 3 months and +7 days. Example: last period started: August 10, - 3 months= May, +7 days= 17; due date is May 17th.
