Kindly suggest about the best quality which we get in topmost hotels/restaurants.

Chili Chicken

Ingredients
2 large onions, chopped
½ c vegetable oil
plenty of ginger, chopped finely
4 cloves garlic, minced
3 chicken thighs, skinned and boned
½ chicken breast, skinned and boned
corn starch for coating chicken
6 green chilies, chopped coarsely
5 green onions, chopped

½ c water
1 tsp sugar
1/4 c soy sauce
2 tsp corn starch

Preparation
Heat oil in a wok. Put in onions and fry until they are caramelized, stirring every so often.


While the onions are caramelizing, cut the chicken into bite size pieces. Coat each piece with corn starch.


Add ginger and garlic to onions and fry some more. When the onions, ginger and garlic are done, push them up to the sides of the wok to make room for the chicken.


Add chicken pieces to the hot oil. Fry until the chicken is brown and has crispy bits on the edges.


Stir onion mixture from the wok sides into the chicken. Add green chilies and green onion. Stir around just enough to warm the chilies and green onion. Push the chicken mixture to the upper sides of the wok to keep it crispy as you make the sauce.


Mix together water, sugar, 2 tsp cornstarch, soy sauce in a small bowl. Throw it into the centre of the wok. Remove from heat and stir sauce til thickened. Mix well with chicken and onions.


Serve with plenty of steamed rice, broccoli and beer.



Chicken and Corn Chili
I serve this with grated cheese, sour cream, chopped cilantro and green onions, and flour tortillas on the side."

INGREDIENTS:
4 skinless, boneless chicken breast halves
1 (16 ounce) jar salsa
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
salt to taste
ground black pepper to taste
1 (11 ounce) can Mexican-style corn
1 (15 ounce) can pinto beans



DIRECTIONS:
Place chicken and salsa in the slow cooker the night before you want to eat this chili. Season with garlic powder, cumin, chili powder, salt, and pepper. Cook 6 to 8 hours on Low setting.
About 3 to 4 hours before you want to eat, shred the chicken with 2 forks. Return the meat to the pot, and continue cooking.
Stir the corn and the pinto beans into the slow cooker. Simmer until ready to serve.

Mr.Nair,
when I was travelling through Kerala, in between ALWAY to MALA , there is a small Local Bar. They serve the most Delicious chicken chili in the word. I wish, the same quality i can find in Kolkata. and remember one thing 5 star hotels don't produce top quality Chicken Items. 'cause they stuff their items in One month advance. The TAJA MAAL you can get from Road Side Dhaba only.

First u cut the chicken into bite-sized pieces. Marinade in ginger-garlic paste,cornflour,salt, white pepper powder.
After half an hour or more deep fry these pieces till golden crisp.Drain and keep aside.
Dice onions,green bell peppers(shimla -mirch) and stirfry in wok.
Add add soya sauce, vinegar as per taste, salt, pinch of sugar and pinch of ajinamoto.finely chopped garlic is thrown in too.after onions turn transluscent, put in the chicken pieces and stir in together.Cover for five minutes to mix the juices. Uncover and stir carefully taking care not to break the pieces.
Another two minutes and delicious chilly chicken ready!

the best recipe is here:

1. buy it from a good 5 star restaurant.
2. unwrap at residence
3. put in a microwave.
4. ask your hubby thereafter to watch for it.(just to give him belief that its your make)
5. serve for three ( do invite me also)
