Chocolate Chip Oatmeal Cookies

3/4 cup quick-cooking oatmeal
1 cup pecans
1 cup butter
1/2 cup sugar
3/4 cup firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
9 ounces semisweet chocolate chips

Preheat oven to 350 degrees, and place rack in center. Toast oatmeal and pecans on baking sheet until lightly browned, about 1 minute. (Don't skip this step -- it makes all the difference.) Remove and reserve. Turn oven up to 375 degrees.

Cut butter into 1-inch pieces. Use metal blade to process with both sugars until smooth, about 2 minutes. Scrape work bowl as necessary. Add eggs and vanilla and pulse until just mixed, about 6 times.

Add pecans, flour, salt, baking soda and half the oatmeal. Pulse until mixed, about 8 times. Remove to large bowl, add remaining oatmeal and chocolate chips and stir to mix. Drop by rounded teaspoonfuls onto greased baking sheets 1 inch apart and bake until golden brown, about 11 minutes. Makes 2 1/2-inch cookies (about 50 cookies)

1/2 c sugar
1 egg
1 ts vanilla
1 1/2 c flour
1 ts baking soda
1/2 ts salt
1 ts cinnamon
1/8 ts nutmeg
3 c oats
2 c chocolate chips
1 c walnuts; chopped

Instructions

Heat oven to 350. Cream margaine with sugars until light and
fluffy. Beat in egg and vanilla. Stir flour with baking soda, salt
and spices; add to creamed mixture, mixing well. Stir in oats. Fold
in chips and nuts. Drop by rounded tablespoon onto ungreased cookie
sheets. Bake 8 to 9 minutes for a chewy cookies, 10 to 11 minutes for
a crisp cookie; remove to wire cooling racks. Store in tightly
covered container. About 6 dozen 2" cookies.

3 cups rolled oats
1 cup milk
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup margarine
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Soak the rolled oats in the milk for at least ten minutes.
Sift together the flour, baking soda and salt, set aside. In a medium bowl, cream together the margarine, brown sugar and white sugar. Stir in the eggs and vanilla. Add the sifted ingredients, and mix well. Then stir in the oat mixture and chocolate chips.
Drop dough by heaping spoonfuls onto the prepared cookie sheets. Bake for 12 to 15 minutes in the preheated oven, until cookies are golden brown. Cool on baking sheets or remove to cool on wire racks.
