They were plentiful and were very good when cooked on an open fire in the outdoors. When it was hot in those days, people didn't want to heat up their kitchens and houses by using the oven. Electricity was expensive then and with using the oven and having to turn up the a/c it got really expensive. Most families would prefer to spend money on other things live Big Screen TVs and DVDs and Tivo. They also liked having swimming pools and fancy cars--so the opted to barbecue doves and save money for the other things. As soon as Wal Mart went in everyone had to have money to shop the sales there each week. It's similar to today--not much has changed, except we don't eat too much dove--we eat chicken, but it taste like dove.

The Holy Spirit is often symbolized as a white dove. When Jesus was baptised in the River Jordan, a white dove came from Heaven and God spoke from Heaven as well. This showed the 'completion' of the Trinity, Jesus, the Son, The Holy Spirit in the form of a dove, and the voice of God.

The only thing that comes to mind is that Noah released a dove from the ark three times. The first time the dove came back, the second time the dove came back with an olive branch in its mouth, and the third time he released it, it didn't come back at all, and that's how he knew it was safe to get out of the ark, because the water had subsided.

The dove doesn't necessarily have to be white. Although white represents purity. The dove itself represents the Holy Spirit.
Luk 3:22 And the Holy Ghost descended in a bodily shape like a dove upon him, and a voice came from heaven, which said, Thou art my beloved Son; in thee I am well pleased.

The dove is associated with purity, peace, and righteousness and the Holy Spirit. When Jesus was baptized and came up out of the water, the Holy Spirit descended upon Him in the likeness of a dove. The symbolized God peace and anointing resting upon Him.
