I am a looking for a recipe for AUTHENTIC asian friend rice. I have been surfing the net, but am only find the Americanized versions. I have a rice cooker, so I am part way there already.

I have read by many sources, that it is best to use a rice cooker to cook the rice. Let the rice sit a day or two, THEN fry it.

This is from my Mom:
2 cups of cooked rice
1 egg
3 strips of bacon cooked
2 Tbls vegetable oil (canola or peanut oil)
1 garlic clove crushed flat and one slice fresh ginger
1/2 medium onion diced
1 carrot grated
1 celery stalk small diced
1/2 red bell pepper small diced
Left over meat (chicken, hot dog, bologna, ham, sausage)
1 Tbls soy sauce
2 green onion stalks sliced thinly at an angle
salt and pepper to taste
Cook 2 cups of rice and then put in the refrigerator in a bowl covered with plastic wrap. (actually we use left over rice from the week). This is to dry the rice as freshly steamed rice is too sticky.
In a large fry pan or wok cook the bacon and set aside.
Drain pan of bacon grease, but do not wipe out clean.
Add the oil and then the garlic and ginger on medium heat.
Pull the ginger and garlic out once they start to slightly brown, approximately 3 minutes.
Put the onions, celery and bell pepper in the flavored oil and add the meat, cook 2 minutes on medium high heat.
Add the rice and stir in the carrots.
Stir with a wooden spoon and make sure the bottom is constantly stirred.
Pour the soy sauce on and make a well in the center of the pan and put the egg into it stirring to mix and breakup in smaller pieces. Add 2 Tbls water to moisten. Salt and Pepper.
Top with the bacon bits and green onions and serve.
This dish is typically made with left overs and whatever vegetables you have on hand. The meat is for flavoring and not a main ingredient. You can spice it up with red pepper flakes added when you cook the onions.

Try to use rice that was cooked the day before, tastes better somehow.
Anyway, why fried rice came about is cos it's the easiest way to combine whatever was leftover from the previous meal.
Put the leftovers in a heated wok to start and once they are hot, add the rice. Mix well and then add seasoning
Basic fried rice: Rice, eggs, peanut oil, salt, dark soya sauce and just a few drops of sesame oil

Authentic Fried Rice
Ingredients
(4 servings)
2 oz Chinese barbecued pork
1/4 lb Fresh or frozen peas
2 tb Oil, preferably peanut
2 c Long-grain rice, steamed and chilled
1 ts Salt
2 Eggs; beaten
4 oz Fresh bean sprouts
GARNISH:
2 tb Finely chopped scallions
Instructions
CUT THE PORK INTO FINE DICE. Blanch the peas in a saucepan of boiling water for about 5 minutes if they are fresh or 2 minutes if they are frozen. Drain them in a colander. Heat a wok or large skillet until it is hot. Then add the oil and wait until it is almost smoking. Add the cooked rice and stir-fry it for 1 minute, and then add the barbecued pork, peas and salt. Continue to stir-fry the mixture for 5 minutes over high heat. Next add the beaten eggs and bean sprouts and continue to stir-fry for 2 minutes or until the eggs have set. Turn the mixture onto a plate and garnish it with the scallions. Serve at once, or let it cool and serve as a cold rice salad.

Authentic Chinese Fried Rice
2 cups instant rice
2 cups water
1/2 medium onion, diced
1/4 cup frozen mixed peas and carrots (doesn't have to be thawed)
1/4 cup soy sauce (sounds like a lot, but it IS 2 cups of rice!)
1 egg
4 tablespoons oil, divided
1. In a small pot, bring the water to a boil and then stir in rice. Cover with a tight-fighting lid and set aside.
2. In a large skillet, place 2 tablespoons of oil to get hot over med-high heat. Scramble egg, stir-frying the heck outta that sucker to make sure it's good and broken up. Put it into your serving bowl for holding.
3. Put the other 2 tablespoons of oil in the skillet and fry the onion until almost trasparent.
4. Add the peas and carrots, stir-frying those to thaw. Heat thoroughly.
5. By this time, the rice should be ready; pour it into the skillet and add the egg. Pour in the soy sauce as well.
6. With a quick hand, toss ingredients over med-high heat and stir quickly. "Fry" the rice until all the soy sauce is distributed and the color and strenght is to your liking.
7. Dish this stuff up and serve it with your favorite other Chinese dishes or just do what I do and make a meal outta this stuff!

First steam some rice on the rice cooker then let it cool off. Then fry it with pea, meat, eggs and etc.

cook rice ahead of time (1-2 days)
wisk up some eggs and make scrambled eggs (NOT FULLY COOKED)
take it out and put the rice back in
make it sort of crispy (use a spatula and press on it against the pan)
put in the eggs and
1 green onions
2 peas (ill)
3 carrots etc...
depends on what you like...
tada!

For fried rice you can put anything you want....2 thinsg to remember for asian friend rice....over night cooked rice and dark soya sauce.....and stir fried in high heat ........
