GREEN CHILI ENCHILADAS

1 lb. ground beef
1 onion, chopped
1 lg. can evaporated milk
1 lb. Velveeta cheese
3/4 c. grated longhorn cheese (goes on top)
2 cans cream of chicken soup
1 sm. can chopped green chilies
1 pkg. corn tortillas

Brown meat and onion in skillet and set aside. Combine milk, soup, green chilies and Velveeta cheese, cook until cheese is melted.
Fry tortillas and drain (just to soften).

For Enchiladas: Put a spoonful of meat in tortilla and roll, place in pan. Continue this procedure until all tortillas and meat are used. Pour cheese mixture over and then top with grated longhorn cheese. Bake at 350 degrees for 30 minutes.

For Casserole: Tear tortillas in pieces and line bottom of pan, next layer meat, then cheese - alternate layers until all is used. Bake at 350 degrees for 30 minutes.

For Dip: As a dip - combine meat and cheese mixture and use chips to dip.



GREEN CHILI CHICKEN ENCHILADAS

2 cans cream of chicken soup (no water or milk)
1 lg. sour cream
1 lg. green chili, diced (you might want to use a small can of green chilies)
15 oz. jar or canned boned chicken

FILLING:

2 1/2 c. grated cheese
1 c. green onions, chopped or chives

Mix soup, sour cream, green chili, salt and chicken together. Pour a little of this mixture in bottom of pan. Fill tortillas with cheese and onions and roll each filled tortilla and put into pan on top of mixture. After all tortillas are in pan, pour rest of mixture over enchiladas. Bake at 350 degrees for 25 to 30 minutes. I use a 9x12 inch pan.


GREEN CHILIES ENCHILADAS

2 lbs. ground beef
1 med. onion, chopped
12 corn tortillas, fried
1/4 c. butter
1/4 c. flour
1 (8 oz.) chopped green chilies
1/2 gallon milk
1 lb. Velveeta cheese
Cheddar cheese, shredded

Brown ground beef and onion, drain well and set aside.
SAUCE: Melt butter then add flour; mix well. Add in green chilies, milk and cubed Velveeta cheese. Heat until cheese is melted.

Roll meat mixture and cheddar in tortillas. Pour cheese sauce over tortillas and cook at 350 degrees for 20 to 25 minutes. Enchiladas should be bubbling. Serve with HOT salsa.


GREEN CHILI ENCHILADAS

1 lb. ground beef
1 lg. onion, chopped
4 oz. can green chili peppers, chopped
1 lb. Cheddar cheese, grated
1 (10 oz.) can or pkg. tortillas
10 oz. can enchilada sauce (red or green)
1/2 c. shredded American cheese
1/2 c. chopped olives

Brown beef and onion in skillet until meat is done. Add chilies and Cheddar cheese. Heat until cheese is melted, stirring occasionally. Heat about 1/4 inch oil in another skillet and soften tortillas one at a time in this. Oil not too hot. Preheat oven to 400 degrees.
Put 2 tablespoons meat mixture on each tortilla, roll up and arrange rolls in deep baking dish. pour sauce over these, sprinkle with cheese and bake 10 minutes or until cheese is melted. Remove from oven and sprinkle with olives.

Enchiladas Verdes - Green Chili

Ingredients

(4 servings)

12 Corn Tortillas
4 tb Oil Or Lard
1 Clove Garlic
1 tb Flour
4 c Green Chili Sauce
1 Salt To Taste
2 c Cheddar Cheese, Grated
1/4 c Minced Onion


Instructions

Fry tortillas in fat to soften. Heat garlic in oil then discard garlic. Blend flour into oil. Stir in green chili sauce and heat thoroughly. If mixture is too thick, add water. Add salt to taste. Layer tortillas with sauce, minced onion and cheese on oven-proof plates. Sprinkle cheese on top. Use 3 tortillas for each serving. Place in oven to allow cheese to melt. NOTE: For a real New Mexican touch place a poached or fried egg on top. The egg seems to help meld the flavors.

Look on the label of Old El Paso green chile sauce. There is a recipe for Creamy Chicken Enchiladas that is out of this world.

You use chicken (I use bonesless breast), and chopped green chiles, and Philly cream cheese. Rolled up in flour tortillas and covered with green chile sauce. Then you sprinkle grated cheddar on top.

Sorry, I don't have the exact recipe, but it is on the can.

I make these for my family. I but the canned green enchilada sauce to which I add any fillings my family likes them with crab meat and onions. I like them with cheese and onion. Just follow the directions on the can. They are delectable. I think I'll make them tomorrow. Thanks for reminding me of this meal.
