I heard an interesting homily on this scripture once. The priest was suggesting that the miracle wasn't that Jesus made the food multiply by making it "clone itself" (or whatever) but that Jesus instead inspired people to share what they had in such an abundance that there actually was food left over.
Any which way, picture the scene. All those people out in the middle of nowhere, and according the scripture, there were women and children, too. The women probably had baskets with them as part of their daily lives. The 12 baskets might have been given to pick up the scraps.
Or how about this - what if this is an indication of measurement? When we say that we have 3 cups of milk, we don't necessarily have three individual cups full of milk.

It never said they didn't have any empty baskets lying around. They just used the baskets to gather up what was left of the extra food that God was providing through the 2 fish and 5 loaves.

That's all made-up baloney. If David Copperfield can make the Statue of Liberty disappear through illusion, I don't see why that basket trick couldn't have been done back then.
