I seldom had or should i say never had pudding for dessert before. But on that day i had tried and start to love it.....i wish all food lover out there can share the way of making nice caramel pudding. I prefer original dairy type of pudding....i not into any other flavour like orange pudding or anything else. just simple milk or vanilla......with caramel....yum yum !! hope yall can make my dish come true....thanks yall and happy cooking....

CARAMEL MILK PUDDING

1 (14 oz.) can sweetened condensed milk
Coffee liquor
Unsweetened whipping cream

In large saucepan, place unopened can in enough boiling water to cover, simmer 2 to 3 hours. Serve warm or cold in small dish. Top each serving with 1 tablespoon coffee liquor and a dollop of cream. Makes 4 to 5 servings.

CARAMEL PUDDING SAUCE

1 box brown sugar
1 qt. water
1/2 stick butter

Bring to a boil. Mix all together: 1 c. brown sugar 2 eggs 4 tsp. baking powder 2 tsp. cinnamon 1/2 stick butter 2 c. flour 1 1/4 c. milk
Add this batter to the sauce, put sauce in bottom of baking dish, add batter to the top. Bake in 375 degree oven for 20 to 25 minutes.

Black Bottom Caramel Pudding

Caramel pudding

¾ cup plus 2 Tablespoons sugar
¼ cup water
1 cup heavy whipping cream
2 ½ cups milk
½ cup milk
¼ cup cornstarch
2 eggs
1 tsp. Vanilla extract
¼ tsp. Salt
Combine sugar and water in heavy bottomed saucepan. Cook without stirring, over medium heat, until mixture begins to color around the sides of the pan. Swirl pan around to evenly distribute color. When caramel turns dark amber (be careful, it will color fast, and can turn bitter quickly), add the heavy cream slowly in a steady stream with a wire whisk (stand back, the steam may burn) (add cream slow, stir fast). Place back on medium heat, and add 2 ½ cups milk.

Stirring occasionally, bring to a simmer. In a small bowl, mix ¼ cup cornstarch and ½ cup milk and whisk this mixture into caramel mixture. Stir constantly over medium heat and simmer about 2 minutes. Temper about a cup of the hot caramel mix into the eggs, then whisk mixture back into pan, cooking for 2 minutes, until thickened. Strain, cover surface with plastic, and chill completely.
