My dad is a diabetic and we have a grape vine in our yard and we just picked the grapes and he loves homemade jelly, and really would love for me to make him some grape jelly that is sugar free so any recipes would be appreciated.

try using a normal jelly recipe but subsitituting sugar for splenda or other artificial sweeteners. Alternatively, you could try using honey or malt as a sweetener?

http://sidedish.allrecipes.com/az/SgrFrStrwbrryJiffyJm.asp <--- that's a recipe for sugar free strawberry jam, but it could work just as well with grapes I'm sure =)

jellies and jams are typically thickened with pectin. It occurs naturally in fruits but most especially in things like apples and cranberries. the problem with pectin is that it needs sugar and heat to activate it. you have to find another thickener. starches will go through a process called retro gradation, where the water or liquid will leech out over time. gelatin or agar agar could be used, but they tend to make things grainy. try xanthain gum or gum Arabic. its something that you need to experiment with.

Check the packet to find how much sugar is in the jelly, then simply add the same amount of anti-sugar to the mix.
