I'm going to be cooking vegetables, but it requires 1 tbs of vegetable oil. Does that mean I have to count the calories from the oil?

Anything that you add to your food, that has calories, requires those extra calories to be added to the total calorie intake.
On the bright side, if you cook for two, you only add half of the calories, as your partner will be consuming the other half!!!

I guess if you are a keener yes you would count the calories in vegetable oil as well.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
