I work in a potato processing plant. Potatoes are blanched by putting them in hot water (about 180 degrees) for approximately 10 -12 minutes after they have been cut into strips. Blanching leaches out the natural sugar in the potatoes and sometimes additional sugar is added to the water in the blancher. this sugar water mixture evenly coats the outside of the french fries as they are blanched and when they are fried, the sugar caramelizes giving the french fries the golden brown color people expect. After blanching the fries go into a dryer (oven) at approximately 200 degrees for about 8 - 10 minutes which causes some of the water to evaporate from the french fry strips before being fried in vegetable oil. The reason for this is to give the fries the color that the customer expects and the drying affects the solids (water to potato matter ratio) of the fries. French fries normally have a solids percentage of 34 - 36 percent. The rest of the fry is water. You don't have to blanch fries which are made at home, but you could do it by putting the strips in a saucepan of hot water. Some experimenting may be necessary to figure out how long to blanch your fries as you will probably only make about a pound or so of fries at a time. We make about a million pounds a day, every day.

no real need to blanch potatoes for french fries. just peel; and soak in water to keep them from turning brown while peeling the rest.
heat cooking oil in deep fryer. do french fries cut, rinse, and towel dry. fry a batch at a time.

blanching the potato's cook the inside and frying it crisps the outside. slice and soak the spuds in salted water. drain and dry. blanch in hot oil. about 280 to 300 degrees. then crank up the fryer to 375, then fry.
