you blanch them by droping them in really hot grease for about 2 minutes. drain them and then freeze them .....I do this all the time.

I don't think you have to actually blanche them. I think just soaking them in water to remove the startch works. If you fry them twice they get extra crispy.

I usually deep fry them in hot oil for about 7 minutes, drain them and let them cool. Then when I am ready to use them, I put them back in the hot oil and fry until nice and golden and crispy!
