Left-over cheese will retain its flavour and moistness if you re-wrap it in the original wrapping and refrigerate as soon as possible. If it does appear to be past its prime, however, here's a rescue plan:


Grate or melt hardened cheeses into your favourite recipes or fondue. Shavings of Canadian Cheddar can liven up a tomato or onion soup, and left-over Brie is ideal in an omelet. Or give Brick cheese a second life by shredding it on pizza.
A spot of mould on your firmer cheese? It's usually a sign of humidity. Simply cut away the mould and use the rest.
Mould and discoloration usually start on the surface and work their way into the body. Again, cut away the affected area and melt the rest in a cheese sauce or other recipe.

some cheese's have natural molds. but if its gone past its use by date then the cheese is beyond its best, i would throw it away anyway, i work as a food technologist. i shouldn't think it would make you ill, but the taste and quality of the cheese intended by the manufacturer is now in doubt

YES the mold helps it to age....cut off mold and eat cheese

Best to boil to for 20 mins in bleach, just to be on the safe side.

Yes, as long as you cut off the offending mold...We do it all the time...It won't hurt you...
