what type of things would you be looking for if you were to wish to acquire a cook book?

Realistic recipes. Not quite 30 minute meals but not a bunch of 4 course meals. Things that would be too expensive to make but not a low budget only kind of meal. It would have to be balanced not too many fish recipes but not too many beef. Also it would be cool if the main course recipes had a suggestion that referred as to which salad and dessert would go great together and why as well as the wine that would be a good match (red or white)

easy recipes, pictures, ease of understanding the recipe, measure table and amount substitutions. (such as a table that says 1gallon = 4 quarts), also a food substitutions list, (if you dont have this, you can substitute this in any recipe). original recipes along with the old standards such as pot roast, stews, spaghetti, things your grandmother would have made with just what was available at the moment. also the possibility of changing some of the recipes into healthier versions. oh, and lets not forget a list of way to fix the recipes if someone should happen to mess up, like removing salt from a recipe by putting in a raw cut potato until it soaks up the salt.

Any recipe book that gives you one good recipe has paid for itself.
Look out for book sales great value if you think like me
Compare the cost of the book with the cost of a resurant meal "makes you think"

great photographs and content. Not the same o same o crap you see in EVERY cookbook.

I want to see more OFFALS and variety meats being used. I like seeing the use of scraps and parts that people generally toss. I also don't want the 'home' or housewife version of the recipe. I want to make it just like it's made in a full service restaurant.

I would want recipes that were easy to follow and ingredients that were familiar to me, not some totally off the wall stuff that i have never heard of.

Clear recipes.
Pictures of finished product and any complicated steps.
Alternative ingredients.

Define such terms as "dash". Call it 1/8 of a teaspoon if you have to.

Less cakes, desserts, and cookies, and more casseroles/hamburger recipes, and meals for a budget or people with no. time.
And ALWAYS unique snacks, for when you want to treat co-workers or have a party!

I would want simple, easy to prepare, kid friendly food that tastes and looks good, made with ingredients I may have at home.
