Here's a wierd suggestion. I had a mac n cheese competition at my house. We had judges and three competitors. It was like Iron chef. We had to add six ingredients to a box mac n cheese. We had mac n cheese nachos. (suprisingly good). Stuffed peppers and stuffed shells. It was hilarious. For a more serious answer.... try adding chunks of cream cheese and smoked cheddar (amazing)

Pork goes in mac and cheese well.
You can also add different kinds of cheese to thicken it up.
