Hey guys, I'm making dinner for 4 tonight. I was wondering what to make. I have some ground beef, some tomatoes, some jalapeno peppers, some onion. I have potatoes and lots of fresh basil and oregano. Does anyone have a suggestion on what to make? I'd be happy to hear from you all! :)

Yep, you guys are doing great with your answers. I have a lot of stuff not listed, I just put down the things I had a taste for tonight. I'm a chef at the Hyatt Hotel here, and am normally full of ideas, but tonight I am so drained that I can't come up with anything to cook! Thank you all so much for your recipes and kind advice, keep it coming!

I would slice the potatoes, sprinkle with basil\oregano, top that with meat and onion you have cooked AND DRAINED of grease. In another bowl, I would mix the tomatoes, juice and all with one of the peppers finely diced. Put half of that over the layer of taters and hamburger. Repeat this all again.
Pour about 1/2 water over the whole thing, cover, and baked for 40 minutes at 375.
Got any parmesan to top it with???

Throw the ground beef in a pan fry it up drain it add the tomatoes and peppers and onions let it simmer. Take the potatoes fry them or boil them and toss them with some olive oil if you have it. Stir the fresh basil and oregano into the taters. Serve the hamburger like sloppy Joe's or toss it with the potatoes. If you got some noodles hanging around maybe throw everything except the potatoes into a goulash. Serve the taters on the side baked fried or whatever sounds good. Darn it now I am hungry and I don't have anything but the potatoes!

Cut the potatoes in 1" cubes and boil them in salted water and 2 garlic cloves crushed.
Brown the ground beef in tsp cumin, pinch of cinnamon, Tbls chili powder, oregano and basil.
Pull the cooked meat from the fry pan and add 1 Tbls olive oil and 1 Tbls butter and brown the onion.
Then add jalapeno (remove seeds if you don't want too hot) and another clove of finely diced garlic and continue cooking for one minute.
Add the beef to the onions and add chopped tomatoes and 1 can of black beans (drained) and 1/2 cup of chicken stock.
Spray casserole dish with vegetable spray.
Line a casserole dish with large pieces of tortilla shells and top with the beans and meat mixture.
Mash the potatoes with butter and sour cream and top the meat mixture with the potatoes. Top with Parmesan cheese.
Bake on 350 degrees for 30 minutes until the potatoes are slightly browned. Make sure you put a flat sheet pan down to catch any dripping sauce.

Well I would suggest home made tacos, with the ground beef tomatoes, jalapenos and onion.
But the potatoes and basil and oregano might have to wait for another time and you can make a nice pasta sauce with the Tomatoes, onion oregano and basil.
I would do the pasta sauce and save the potatoes for another night.
Or make a spicy meat loaf with mashed potatoes, heck if you had garlic you could make garlic mashed potatoes.

INGREDIENTS:
2 pounds ground beef
1 medium onions, chopped
2 (19 ounce) cans minestrone soup
1 (14.5 ounce) can pinto beans with jalapeno peppers
2 (10 ounce) cans diced tomatoes and green chiles
garlic powder to taste
seasoned salt to taste
ground black pepper to taste

DIRECTIONS:
In a skillet over medium heat, cook the ground beef and onions until beef is evenly brown and onions are tender. Drain grease.
In a pot, mix the beef and onions, minestrone soup, pinto beans with jalapeno peppers, and diced tomatoes and green chiles. Season with garlic powder, seasoned salt, and pepper. Bring to a boil, reduce heat to low, and simmer 1 hour

Shepherds Pie, make the meat sauce with the mince and all the veggies and herbs and top with mashed potatoes and bake it in the oven for half an hour.
