Start with good tomatos, blanch them, remove the skins.
If you have a food processer, puree the tomatos. Add cream or milk if you like, water if not. I like with cream, butter and garlic.

Homemade Tomato Soup

1 (14-ounce) can chopped tomatoes
3/4 cup extra virgin olive oil
Salt and freshly ground black pepper
1 stalk celery, diced
1 small carrot, diced
1 yellow onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 bay leaf
2 tablespoons butter
1/4 cup chopped fresh basil leaves
1/2 cup heavy cream, optional
Preheat oven to 450 degrees F.
Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.
Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream, if using. Puree with a hand held immersion blender until smooth.

INGREDIENTS:
* 4 cups chopped fresh tomatoes
* 1 slice onion
* 4 whole cloves
* 2 cups chicken broth
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1 teaspoon salt
* 2 teaspoons white sugar, or to taste
DIRECTIONS:
1. In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
2. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

Ingredients for Tomato Cream Soup
4 tomatoes, peeled, chopped
2 tablespoons butter
2 tablespoons flour
2½ cups milk, scalded
1 cup water
Seasonings to taste
Instructions
Place tomatoes, water and seasonings in the same sauce pan and let boil slowly for about 3 to 4 minutes.
Place butter in another sauce pan.
Melt it, and then mix in the flour, stirring all the time.
Add slowly the milk to make a smooth sauce.
Let cook for 5 minutes.
Add the cooked tomatoes.
Mix thoroughly and boil 2 minutes.
Then serve.

Tomato Rosemary Soup
Ingredients:
1 cup raw cashews
3 cups water
1/2 teaspoon onion salt
1 tablespoon onion powder
2 tablespoons arrowroot or cornstarch
1/4 cup instant brown rice
1 quart tomato purée
1 tablespoon honey
1 teaspoon basil if desired
fresh rosemary
Preparation:
Blend cashews, water, onion salt, onion powder, and arrowroot together until smooth.
Pour this mixture into a saucepan with the tomato purée and honey, and bring to a boil. Lower the heat and simmer, stirring occasionally.
Add the rice and simmer until rice is tender.
Salt to taste. Add basil and set off the heat covered for 5 minutes.
Serve garnished with fresh rosemary.

You take 1-2 lbs. of fresh tomatoes, chop them up and press them through a strainer that's been set over a large pot or bowl. Your goal is to remove the tomato skins and the seeds, which can be disgarded. With the pulp and the tomatoe juice place it into a blender and puree' until smooth. Bring the tomato mixture to a quick boil, reduce to a simmer and whisk in heavy cream or half-n-half until you find the desired consistency. You can add in fresh chopped garlic, sea salt & pepper and a bit of freshly chopped basil to taste.
