I have butternut squash from my garden and need to know how to cook it. Is it sweet? add cinnamon? Any recipes or ideas would be great. Thanks

Butternut Squash and Apple Casserole

* 1 small butternut squash, about 2 pounds
* 2 apples, cored, peeled, sliced
* 1/2 cup brown sugar, firmly packed
* 1/4 cup cold butter
* 1 tablespoon flour
* 1 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg


Peel squash, scoop out seeds, and cut in small pieces.
Place squash and apple slices in oblong baking dish (7x11-inch). Blend remaining ingredients with fork or pastry cutter until crumbly.
Distribute over squash and apple.
Cover and bake butternut squash casserole at 350° for about 45 to 50 minutes.
Butternut squash recipe serves 6 to 8.

1 onion, chopped
1 lb winter squash, peeled and cut into bite-sized cubes (hubbard squash is recommended, sweet pumpkin can also be used)
1-2 lb yams, peeled and cut into bite-sized cubes (or sweet potatoes)
oil, to saute
1 cup coconut milk
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
salt

1. Fry onion in skillet, stir and cook until tender.
2. Stir in all other ingredients, and heat to a boil.
3. Reduce heat, cover and stir occasionally. Cook until vegetables are tender (ten to fifteen minutes).

One way I like to prepare it is to do the following:

1) wash the outside
2) cut in half
3) scoop the seeds out
5) add a few pieces of cubed butter to each half
6) sprinkle with: sugar, cinnamon, vanilla, little bit of salt
7) stick in the oven at 350 for like 45 min to an hour
8) scoop out of the skin with a fork and serve, mash, or whatever.

You can also cut it in half moons before you prepare it and bake it in that form...whatever you do don't boil it..it sucks boiled, and the natural sugars inside don't get a chance to carmalize and get gooey and delicious.

I just slice it in half, put some smart balance spread in the hole part, sprinkle with a little salt and pepper and bake it at 400 (covered) in a glass pan with some water in the bottom of it.

I am weird, most people make it with brown sugar and bake it upside down, but I don;t want the sweet taste and the butter stays in the squash my way.

I used to make things different, and try to get people, and myself to eat new things they normally wouldnt. So I tried this dish.

I cut the squash in half scoop out the inside of seeds, and rubbed with butter and herbs. bake in ove cut side down for 15 min, depending on your likeness of tenderness.
Then as it is cooking combine, cooked meat like hamburger, sausage, ground turkey. You make your choice. Add to this cooked rice, or potatoes, I added oatmeal as in meatloaf, but wasnt my favorite. I even added ramen noodles and loved it.
Add favorite flavors for seasoning. I love garlic and onion, celery seed. pepper flakes. I ahve put corn, peas, carrots.
I did not like squash and i loved it, i change it up every time i make it, i also am cheese lover so i add parmesan, and others , but non really was good as the parmesan, in my book. Did not like cheese withe the squash lol.
I have heard you can make into a soup too , but i ahvent done it yet. too scared, if you try the soup tell me if its good or not.

For something different try peeling it and cutting it in cubes and either roasting it with a drizzle of olive oil and balsamic vinegar or sauteeing it with a sprinkle of sea salt or coarse kosher salt and ground pepper.

one time I had some butternut squash ravioli...no kidding best pasta dish I have ever had.
