The 5.8G pones operate at a frequency of 5.8 GigaHertz.
The 2.4G operate at 2.4 Gigahertz.
That part is obvious. To the user, the main difference is a matter of interference. Neither is "better" than the other. In one area you might find the 2.4g works best, but in another area the 5.4 is better. It depends largely on what other devices in your area operate at the same (or close) frequency. Some wireless surveillance camera systems for instance operate at 5.8. This MAY interfere with a 5.8 phone.
If you buy a 2.4, bring it home and find out that you get interference, return it for a 5.8 model.
Some less-than-educated sales people will tell you 5.8 is better (simply because it's a larger number). This is BS

A phone that is operating in the 5.8 GHz range is not prone to interfere with a wireless network that operates at 2.4 GHz.

My 5.8 GHz Panasonic has Talking Caller ID, color background, downloadable ringtones and wallpaper, I can synch my address book with each handset and I can hear my answering machine messages through my handset.
My clarity and range are the same as my 2.4 VTech.

Less interference from other devices.
Better range from the base unit and signal clarity.
Being a newer technology it would also have more features and be lighter than the older phones.
