I hope that you are making Mead, there is nothing like it........
But if you are not the hardening of honey is normal it also proves it was not treated chemically with anything. Just heat it slowly and it will soften up.

1. Place open jar (not the plastic squeeze bottles) in a pan of hot water until all crystals melt, stirring after 5 minutes.
2. Place 1 cup in it's own jar, cover tightly with plastic wrap, and microwave on HIGH until melted, less than 1 or up 1-1/2 minutes depending on full the jar is.
Honey will crystallize again as it cools.
You can also buy creamed honey, which is essentially crystallised honey. However, it won't harden like liquid, and is butter-consistency.

Carefully place your honey in its container in a pan half filled with water. Bring it to a soft boil, then turn it off and let it stand for about five minutes or so. Watch it carefully so the boil does not get too high or so that the honey does not spill out at first; then stir gently.

set the honey container in a bigger container filled with hot water and leave it there for about 10 minutes or until it melts. DO NOT MICROWAVE IT... it will kill some or all nutrients

Put it within a container of water, Put that container in a simmering pot of water. It will temper the honey without burning/changing the consistency.

Heating it up by heating water in a pot and setting the container in that works.
I don't recommend adding water though, so try to prevent it from drying.

Assuming the honey is still in its jar, place the jar into boiling water. Do NOT microwave it, it will lose some of its flavor.
