My hair is pretty straight but every time I move it gets knotty. I want straight hair and healthy hair. My hair is black and I did not dye it haha.

It would help to know the condition of your hair normally, how healthy your diet is, what shampoos/hair products you use, etc.
My own hair is naturally soft and very thick. Because there is some Celt ancestry, it is straight but has this odd wave in the back, and humidity ruins it, and it also sometimes can't stay styled for longer than two hours at a time, in some conditions with some hair products and heat settings. I know about knotty hair, in other words, but haven't had to deal with it in years.
Here are the tricks I've used to keep my own hair straight and/or shiny:
Use cool/low hair dryer settings or avoid using heat on the hair whenever possible. Somedays you can't wait for hair to dry though, so give yourself enough time to fix your hair without using high heat.
Buy hair products that mention moisturizer somewhere in the description, and use those at least twice a week. If you don't want to use those things, use a good Vitamin E lotion once a week. Seriously.
Buy other products that are good for setting straight hair in place when heat is applied to the hair. Those will say "therma" somewhere in the title or description.
Pomade keeps ends straight, even on way long hair, so use that instead if you want to avoid the "therma" products and also if you don't want to put product all through your hair. (No stylist will say that.... But they all like my hair when I fix it.) Don't touch your hair at all during the day, if you can avoid it.
Don't use the same shampoo and conditioner everyday. Switch it off every other day or so. Have one that takes care of roots and dryness, another that simply cleanses, and switch.
Next recommendation might be kind of rude, but it has to be said just in case: don't do drugs. Some prescription drugs ruin hair.
If all else fails, get a perm and no one will notice the hair is going through a time when it won't stay straight.
There aren't foods that help, I don't think. Just eat a balanced nutritious diet, get plenty of rest and water.

Hi, If you hair is already straight but it gets tangled, then it's probably fine hair, even if you have a lot of it (thick). Asian people have hair that when looked at under a microscope has a very smooth cuticle and the actual hair shaft is thick in diameter, because of this it tends to lay heavy and doesn't catch on the other hair. Products with silicone work great. They make the hair smooth and slick, so the hair shafts slide by each other instead of catching on and creating knots. Try John Freida products, they are full of silicones. You should also get a wide tooth comb and comb your hair gently but often working from the ends up. You can also carry a product like, No More Tears, along with you to help comb the tangles out. If you're in the wind, you should pull your hair back into a pony tail or bun so it doesn't tangle and cause damage. Hope this helps.

Garnier Fructis has a really good deep conditioner that will make your hair shiny and soft without frizz and protect your hair from damage when you straighten it.
Another good idea would be to get a blow dryer with ION or ceramic technology as well as a CHI straightener. They run at about $110 , so you need to save your money to get it perfectly straight.
Redken also has a serum that you put on dry hair just after it is straightened, and it makes your hair like Asian hair so that if you bend it back on itself, it springs back into place. It makes it much less easy to tangle that way.

Try using a good conditoner like infusium and before you do t sleep do your hair like you are finta go tie it up and in the morning do the same ant the hair will be more tamed!!

john freida and frizz ease have good straightening products also try suave. i love suave and it work wonders for keeping my hair shiny. but since i am black, i've never known what straight hair is unless its time for a perm. hope i helped
