Easy Chicken Cordon Blue with Mushroom Sauce
6 boneless skinless chicken breasts
6 slices ham (I use old fashioned or honey)
6 slices swiss cheese
1 can mushroom soup (I really like Campbell's Golden Mushroom)
2 cups sour cream
1 cup fresh sliced mushrooms
Use a meat pounder to flatten the chicken breats.
Place 1 slice of ham and 1 slice of cheese in the center of each breast.
Roll up and place seam side down in a casserole dish.
Securing with a toothpick if necessary.
Bake, covered, for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear.
While it is baking, mix together remaining ingredients.
Pour over cooked chicken and bake until sauce bubbles.
I usually serve this over egg noodles.

You don't really need a sauce with cordon bleu; you want the outside to stay crisp, after all. But if you want to gild the lily: Saute a finely chopped shallot or two in a tiny bit of butter or oil over medium heat until translucent. Add 3/4 cup chicken broth and 1/4 cup dry white wine. Let it reduce until it has a syrupy texture, Take it off the heat. Stir in 1 tablespoon (a large pat) cold butter until melted, then stir in a small handful of chopped chives. This is just enough to lightly sauce chicken cordon bleu for 4.

Cream sauce. 1 tablespoon butter cooked with 1 tablespoon of flour, make a roux. Add this to 1 cup of hot heavy cream. Wisk it to avoid lumps. You can substitute any milk product but traditionally its heavy cream. Seasopn with salt pepper and nutmeg.
