Why does milk form a skin on top when you heat it up?

that is fat forming. All milk has fat in it. when you cook it thats how you seperate the milk. when big companies cook the milk they skim the fat off the top and they make cream cheese, cottage cheese, sour cream and other dairy products.

Yes as ceceliagirl587 above said. They also make ghee from this.

water does it too - it's called boiling.
