well, no not necesarily. it could be the imitation crab. that stuff you do not have to cook.
please check the package to see if its cooked or not.

California Rolls do not have any raw meat in it. Are you sure the crab meat is raw? A lot of times, the crab meat that you purchase in a grocery store is already cooked.
Most Japanese restaurants use the imitation crab meat in California Rolls, which is already fully cooked.

Yes you need to cook it. Drop the the crab in boiling water with some old bay spice. Cook for 8 minutes and remove from water. Remove the meat from crab, careful to remove all the small pieces of cartlidge. Then use the cooked crab in you recipe. You cannot eat raw crab.

most crab you buy is already cooked. is it white? as opposed to opaque.
Crab has a very short shelf life, so it is either kept alive on the boat, and sold live, or it is cooked on the boat, and flash frozen.
So all crab you eat at a restaurant is cooked, since to kill it you put it in boiling water....so California roll is always cooked crab.

It's not crab meat. It is dyed, cooked fish. Sushi never contains crab meat unless it is a soft-shelled crab roll.
So, you don't have to cook it twice!
