Spaghetti Squash Supreme
1 large spaghetti squash (3-1/2 pounds)
4 bacon strips, diced
3 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Swiss cheese
Cut squash in half lengthwise; discard seeds. Place one squash half cut side down on a microwave-safe plate. Cover and microwave on high for 8 minutes or until easily pierced with a fork, turning once. Repeat with second squash half. When cool enough to handle, scoop out squash, separating strands with a fork; set aside.
In a skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving drippings. Add the butter, brown sugar, salt and pepper to the drippings. Stir in squash and bacon; heat through. Remove from the heat; stir in cheese just until blended. Serve immediately Yield: 4 servings.

You steam the squash halves (remove seeds first). When the squash gets soft after about 20 minutes, you can use a fork to shred the strings out.
After that, you can use it like spagetti - just add sause and meatballs, cheese, bake if you want.
I like it plain with butter. UMMM UMMM good.

Using a large knife split the squash lengthwise and place on a sheet pan, or cookie sheet. Remove loose crap inside(mostly seeds) Bake in oven for 35 minutes. When soft to touch remove from oven, scrap out inside with a fork. It looks like spaghetti. You can use it just like spaghetti and mix it with tomato sauce, or garlic and oil or your favorite pasta sauce.

A lot of cook books will say you have to do all this crazy stuff like microwave it first...slice lengthwise etc. etc....I have found that putting the whole thing in un-cut and baking at 350 till it looks like it is 'wilting' is best. At this point I take it out of the oven and handle it with mitts. Then I cut it down the middle and return it to the oven drizzling olive oil and seasoning with salt and pepper if I like. Its good stuff and my little old Italian grandma always used to serve it with speg sauce and parm cheese. Yum.
Some extras...of course remove the seeds. You can do this after the cooking it really is no big deal and when you try to cut it in half you will see why I said to put it in whole till it softens. lol

Cut it in half, poke the skin a few times with a fork and bake at 400 degrees until soft. Scoop out and shred the insides with a fork and serve with any number of items:
Just butter and salt
Spaghetti sauce
Olive oil, basil and parmesan
Cheese sauce (like mac n' cheese!)

My in-laws grow it on their farm so we have it often this time of year. My sweetie's favorite way is to slice in half lengthwise & remove seeds. Use 1/2 stick of butter for each half & sprinkle with fresh ground pepper & minced garlice. Place on cookie sheet & bake @ 325 until fork tender. Scoop out flesh for a great side with grilled steak, pork loin or fried chicken.
