High-Protein, High-Fiber, Low-Fat Egg White Pancakes Recipe

Makes 13 pancakes, 4 inches in diameter

RECIPE INGREDIENTS

1/2 cup yellow cornmeal
1/2 cup whole-wheat flour
1/2 cup enriched white flour
1 1/2 cups skim milk
3 egg whites
1 cup non-fat plain yogurt

RECIPE METHOD

Mix together the cornmeal, whole-wheat flour and white flour. Blend in the skim milk and allow the batter to stand for 5 minutes.

Whip the egg whites until they stand in peaks. Then fold them into the batter.

Spoon the batter onto a preheated non-stick skillet and cook until bubbles form on the pancake or the edges turn brown, then flip the pancake over and cook for 1 minute more.

Top each with a dollop of non-fat plain yogurt.

Hummus (preferably homemade) with veggies like carrot sticks, celery, pita crisps. You can get the recipe on the food network. This is high in fiber and low in calories.

When ever I'm dieting my favorite meal is asparagus wrapped with turkey. I buy thin sliced turkey that's about 4 pieces for 50 calories and low fat. Wrap half a piece around a stalk of asparugus (I usually made about 8 of them) and bake for about 7 minutes at 350 degrees. I think it's prety yummy. 3 cups quick-cooking oats
2 cups whole-wheat flour
1/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup nonfat yogurt
1/2 cup sugar
1/2 cup honey
1/2 teaspoon vanilla
1 egg white, lightly beaten
1/2 cup dried fruit (cut into small pieces)
1/4 cup nonfat milk

12 servings

30 minutes 15 mins prep


Grind oats in blender.
Mix together dry ingredients.
Cream together wet ingredients and sugar.
Fold in egg white.
Combine wet and dry ingredients.
Form into 12 patties.
Bake at 325 for 15 minutes

3/4 lb round tip steak, cut 1/8 to 1/4-inch thick
2 teaspoons vegetable oil
1 medium onion, chopped
2 cloves garlic, crushed
2 cups water
1 (13 1/2 ounce) can ready-to-serve beef broth
1 (8 ounce) jar salsa
2 cups spinach leaves or escarole, thinly sliced
1 cup lentils

4 servings
In Dutch oven, heat oil over medium heat until hot. Add onion and garlic; cook and stir 3 to 5 minutes or until tender.
Add water, broth, picante sauce and lentils.
Bring to a boil; reduce heat to low.
Cover tightly and simmer 35 to 45 minutes or until lentils are tender.
Meanwhile trim fat from beef steaks.
Stack steaks and cut lengthwise in half and then crosswise into 1-inch strips; set aside. Increase heat to medium; bring to a boil.
Stir in beef and escarole. Immediately remove from heat. Cover and let stand 5 minutes before serving
