Funnel Cakes
1 1/4 c. flour
2 tbsp. sugar
1 tsp. baking powder
3/4 c. milk
1 egg, beaten
Powdered sugar
Cinnamon
Oil
Combine flour, sugar, baking powder and salt together. Add milk and beaten eggs, stirring until mixture is smooth. Put about 1/4 cup of batter in funnel and make design in hot oil in skillet. Fry until brown. Remove from skillet and lay on waxed papper. Sprinkle with powder sugar and cinnamon.
Also good with pineapple or strawberry topping or any other topping.

1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar
1/8 teaspoon salt
1 cup flour
1 cup eggs, about 4 large eggs and 2 whites
Vegetable oil, for frying
Powdered sugar, for topping
Boil water, butter, sugar, and salt together in a saucepan. Add flour and work it in until it is all incorporated and dough forms a ball. Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4 minutes. With mixer lowest speed, add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and mixture is smooth, put dough in a piping bag fitted with a number 12 tip. Heat about 1 1/2 inches of oil in a heavy pan. Pipe dough into oil, making a free-form lattice pattern; cook until browned, flipping once. Remove cake from oil, drain on paper towels, and top with powdered sugar. Continue until all of the batter is used.

I remember I learned how to make them from scratch in 6th grade home ec. class. (Now there's a useful lifeskill, making deep-fried fair food!) I don't have the recipe any more, but I think it was just thin pancake batter. We put it in squeeze bottles (easier and doesn't require as much coordination as pouring it through a funnel). You drizzle the batter into a pan of hot oil and fry it till it's crispy and golden. Then take it out of the oil and let it drain on a paper towel. Sprinkle powdered sugar over it through a fine mesh sieve. I don't know what temp. the oil needed to be, but probably pretty hot so that they don't end up soggy. Eat right away.

DUTCH FUNNEL “CAKE”
2 eggs
1 T. granulated sugar
1/4 tsp. salt
1 c. flour
1 c. milk
1 tsp. vanilla extract
1 tsp. almond extract (optional)
oil for deep frying
Heat 2” to 3” oil in deep fryer or large saucepan to 365º. Meanwhile, mix flour, granulated sugar & salt in small mixing bowl. Add milk, eggs, vanilla & almond extracts. Stir until smooth. Pour 1/2 to 1 c. batter in a funnel (hold finger over bottom of funnel). Hold filled funnel over the hot oil, but not too close for safety reasons, release finger & weave funnel around above oil until funnel is empty. Let batter brown nicely & turn it over carefully. When brown on both sides remove form oil & drain on paper towels. While warm sprinkle with any of the following: cinnamon & sugar, powdered sugar, ground nuts.

Here's another recipe. It's along the same line, but prettier.
DEEP FRIED ROSETTES
2 eggs
2 T. powdered sugar
1/4 tsp. salt
1 c. flour
1 c. milk
1 tsp. vanilla
1 tsp. almond extract (optional)
oil for deep frying
powdered sugar
Rosette Iron
Heat 2” to 3” oil in deep fryer or large saucepan to 365º. Meanwhile, mix flour, granulated sugar & salt in small mixing bowl. Add milk, eggs, vanilla & almond extracts. Stir until smooth. Place rosette iron in hot oil 1 minute. Tap excess oil from iron onto paper towel. Dip hot iron into batter, making sure batter does not cover top of iron. Place back into hot oil. Fry about 30 seconds, or until rosette is golden brown. Immediately remove rosette. Drain on paper towels. Reheat iron in hot oil 1 minute before frying each rosette. Sprinkle rosettes with powdered sugar. Makes 3 dozen rosettes.

I have seen kits at stores. You could also go to a party foods store and they may have the mix. You could also try stores like Bed, Bath and Beyond (they carry party food makers-like cotton candy machines, snow cone machines, hotdog heaters, etc). Have fun.
